Dominique Oraison, Pravesh Gokoolah et Shivam Marooday ont remporté la sélection mauricienne de la Coupe du Monde de la Pâtisserie, organisée par l’Institut Escoffier. Neuf candidats s’étaient affrontés dans trois épreuves exigeantes – chocolat, sucre et entremets glacés – pour décrocher leur place dans l’équipe nationale qui représentera Maurice à la finale mondiale à Lyon en janvier 2027.
Un podium qui illustre l’excellence mauricienne
Dans la catégorie chocolat, Dominique Oraison s’est distingué par la précision de ses créations, devançant Annaice Moothien et Benee Luchman.
En sucre, Pravesh Gokoolah a conquis le jury par la finesse et l’équilibre de ses pièces, devant Kristel Lim et Gérard Larose.
Enfin, pour les entremets glacés, Shivam Marooday a remporté l’or, suivi de Marie Cyrielle.
Cette compétition nationale a mis en lumière le savoir-faire, la créativité et la passion de la jeune génération de pâtissiers mauriciens.

Présent à la cérémonie, Sydney Pierre, ministre délégué du Tourisme, a tenu à féliciter les participants :
« Maurice est une petite île, presque invisible sur certaines cartes du monde. Mais en matière de gastronomie, d’excellence et d’hospitalité, nous figurons parmi les meilleurs. »
S’inspirant de Nelson Mandela, il a rappelé que le chemin de la réussite passe par la persévérance :
« Ne me jugez pas par mes réussites, mais par le nombre de fois où je suis tombé et où je me suis relevé. »
Pour lui, gastronomie et tourisme sont indissociables :
« Il n’y a pas de tourisme sans gastronomie, et pas de gastronomie sans pâtisserie. »
L’Institut Escoffier, moteur d’un rêve collectif
Le directeur de l’Institut, Dr Jérôme Fabre, a exprimé sa fierté :
« Nous avons déjà hissé le drapeau mauricien deux fois à Lyon. Et jamais deux sans trois ! »
Il a salué la relève incarnée par ces jeunes chefs et confirmé que Maurice sera bien représentée lors de la finale mondiale en 2027.
Une aventure humaine avant tout
Pour Sandy Scioli, directrice culinaire de l’Institut et coach de l’équipe, cette édition symbolise la passion et la rigueur d’une génération audacieuse :
« Ce que vous avez vu aujourd’hui, ce n’est pas qu’un concours, c’est une aventure humaine, technique et artistique hors du commun. »
Elle a conclu sur une note d’encouragement :
« Gagner n’est pas une fin, c’est un début. La route vers Lyon sera exigeante, mais pleine de promesses. »
Pastry World Cup: Dominique Oraison, Pravesh Gokoolah and Shivam Marooday crowned Mauritius champions
Dominique Oraison, Pravesh Gokoolah and Shivam Marooday have been named the winners of the Mauritius selection for the Pastry World Cup, organised by the Institut Escoffier.
Nine passionate pastry chefs competed across three demanding categories – chocolate, sugar and frozen entremets – to earn their place in the national team that will represent Mauritius at the World Finals in Lyon in January 2027.
A showcase of Mauritian pastry excellence
In the chocolate category, Dominique Oraison took first place, ahead of Annaice Moothien and Benee Luchman.
For sugar, Pravesh Gokoolah impressed the judges with his precision and creativity, followed by Kristel Lim and Gérard Larose.
And in frozen entremets, Shivam Marooday triumphed, ahead of Marie Cyrielle.
This national selection once again highlighted the depth of talent, passion and artistry driving the Mauritian pastry scene.
“Excellence is an ongoing journey” – Sydney Pierre
Guest of honour Sydney Pierre, Minister of State for Tourism, praised the competitors for their dedication and perseverance:
“Mauritius may be a small island, almost invisible on some world maps, but when it comes to gastronomy, excellence and hospitality, we stand among the best.”
Quoting Nelson Mandela, he reminded the audience that success is built through resilience:
“Do not judge me by my successes, but by how many times I fell and got back up again.”
He also stressed the inseparable link between tourism and gastronomy:
“There is no tourism without gastronomy, and no gastronomy without pastry.”
Institut Escoffier: a driving force for ambition
Dr Jérôme Fabre, Director of the Institut Escoffier, expressed pride and gratitude for his team and the candidates:
“We have already raised the Mauritian flag twice in Lyon – and never two without three.”
He commended the new generation of chefs ready to carry the Mauritian colours to the next level and confirmed that Mauritius will compete in the 2027 World Finals in Lyon.
An artistic and human adventure
For Sandy Scioli, Culinary Director of the Institut and coach of the national team, the competition represents far more than technical excellence:
“What you witnessed today was not just a pastry contest, but a human, artistic and emotional journey – a true expression of passion and craft.”
Her message to the winners and all participants was one of inspiration and perseverance:
“Winning is not the end; it’s the beginning. The road to Lyon will be demanding, but it’s filled with promise and purpose.”
