Une expérience culinaire véritable se construit avec bien plus que de simples ingrédients frais et un certain savoir-faire. Avec ses quatre restaurants aux couleurs et spécialités variées – Beach Rouge, AMARI By Vineet, Duck Laundry et Maison LUX* – LUX* Belle Mare semble détenir le secret pour mettre en œuvre une telle excellence gastronomique. Lors d’une escapade gourmande nous avons pu plonger dans cet univers de saveurs et dans un tourbillon de sens.
Décoration chaleureuse
Avec la plage de Belle Mare en toile de fond pour une dégustation de fruits de mer, il faut dire que le début du parcours s’est révélé être plus qu’envoûtant. En face du Beach Rouge, la chef exécutive, Nancy Kinchela, nous propose des oursins et des huîtres préparés avec des sauces et assaisonnements divers, le tout servi avec du champagne. Cet assortiment est habituellement servi pieds dans l’eau quand la température se fait moins glaciale. L’idée est de permettre aux invités de briser la glace tout en éveillant leurs papilles avec des saveurs fraîches et légèrement électrisantes.
Le prochain arrêt s’est fait au restaurant indien AMARI By Vineet. Là, chef Soubi Mungroo et son équipe nous proposent leur fameux Chutney Chicken, amalgame de saveurs indiennes et mauriciennes, à base de feuilles de coriandre et de menthe, d’un mélange de yaourt et de multiples autres éléments tels que le Makhani Labneh. Ce plat, qui figure sur la carte du restaurant, trouve son essence dans ses divers composants, transmettant une variété de tons gustatifs tout en restant parfaitement harmonieux. À la fois singulière et saine, la préparation incarne également le caractère expérimental et inédit du restaurant, qui, d’ailleurs, revêt une décoration chaleureuse signée Daphné Doomun offrant un effet similaire à un coucher de soleil.
Juste à côté, le Duck Laundry nous embarque dans un voyage culinaire dans l’empire du Milieu. En pénétrant dans le restaurant chinois, on a rapidement l’impression d’être dans un décor de cinéma aux effluves enivrants. En entrée, ce sont des dim sum faits maison à base de crabes et de crevettes qui nous sont proposés, servis avec thé au jasmin pétillant, une combinaison unique et glamour correspondant parfaitement à l’aménagement du lieu. Les chefs du restaurant, Chinyang Wang et Ping Kong Fok, nous proposent ensuite des crêpes et un rôti de canard fondant qui se dégustent ensemble. Cet arrêt semble par ailleurs parfait pour des sorties découvertes culinaires en famille ou en groupe.
Rebroussant chemin vers le Beach Rouge, restaurant méditerranéen, des plateaux garnis de divers fruits de mer frais nous attendent. Véritable festin, cette proposition est parfaite pour les grands mangeurs qui sont plus intéressés par l’ampleur et la richesse du plat que par les détails. Le restaurant permet également de choisir parmi d’innombrables produits fraîchement pêchés afin d’assouvir toutes vos envies de fruits de mer.
Ce parcours culinaire, à la fois raffiné et intense, se termine évidemment avec le dessert à la Maison LUX*, comprenant un cocktail combinant whiskey, concentré de bétel, miel, orange et gingembre pour ajouter un peu de chaleur dans ce climat hivernal. Une pléthore de chocolats en tous genres était également au rendez-vous, pour une clôture gourmande et un moment de pure douceur. Tous ces cacaos divinement travaillés sont exposés pour des dégustations dans le café, où vous pourrez découvrir d’autres créations tant du mixologue, Sahil Kitaruth, que des pâtissiers.
En soi, avec ces quatre destinations, LUX* Belle Mare parvient brillamment à capturer diverses nuances culinaires, qu’elles soient locales ou internationales, pour les adapter en une gastronomie 5-étoile exquise. Le voyage est sensoriel, innovant et parfois même surprenant. Le somptueux nouveau cadre de l’hôtel scelle l’expérience avec un niveau de service admirable et souligne, par ailleurs, l’excellence hôtelière locale. LUX* Belle Mare: plunge into a world of flavours and a sensory whirlwind
A true culinary experience requires more than just fresh ingredients and a certain savoir-faire. With four restaurants of varying colours and specialities – Beach Rouge, AMARI By Vineet, Duck Laundry and Maison LUX* – LUX* Belle Mare seems to hold the secret to such gastronomic excellence. During a gourmet getaway, we could plunge into this universe of flavours and a whirlwind of senses.
Experimental and original character
With Belle Mare beach as a backdrop for a seafood tasting, it has to be said that the start of the journey proved to be more than enchanting. Opposite the Beach Rouge, executive chef Nancy Kinchela offers us sea urchins and oysters prepared with various sauces and seasonings, all served with champagne. This assortment is usually served feet in the water when the temperature is less icy. The idea is to allow guests to break the ice while awakening their taste buds with fresh, slightly electrifying flavours.
The next stop was the Indian restaurant AMARI By Vineet. Here, chef Soubi Mungroo and his team offered us their famous Chicken Chutney, an amalgam of Indian and Mauritian flavours, based on coriander leaves and mint, a yoghurt mix and a host of other elements such as Makhani Labneh. This dish, which features on the restaurant’s menu, finds its essence in its various components, conveying a variety of gustatory tones while remaining perfectly harmonious. Both singular and healthy, the preparation also embodies the experimental and original character of the restaurant, which is warmly decorated by Daphné Doomun to resemble a sunset.
Next door, the Duck Laundry takes us on a culinary journey to the Middle Kingdom. As you enter the Chinese restaurant, you quickly get the impression of being in a film set with intoxicating aromas. For starters, we are offered homemade dim sum made with crabs and prawns, served with sparkling jasmine tea, a unique and glamorous combination that perfectly matches the setting. The restaurant’s chefs, Chinyang Wang and Ping Kong Fok, then offer us pancakes and a melt-in-the-mouth roast duck, which are enjoyed together. It’s the perfect place for a culinary discovery outing with the family or a group.
Turning back to the Beach Rouge, a Mediterranean restaurant, platters of fresh seafood await us. A veritable feast, this offering is perfect for big eaters who are more interested in the breadth and richness of the dish than the details. The restaurant also offers countless freshly caught products to satisfy all your seafood cravings.
This culinary journey, both refined and intense, naturally ends with dessert at the Maison LUX*, featuring a cocktail combining whiskey, betel concentrate, honey, orange and ginger to add a little warmth to this wintry climate. A plethora of chocolates were also on offer, for a gourmet finale and a moment of pure sweetness. All these divinely crafted cocoas are on display for tasting in the café, where you can discover other creations by mixologist Sahil Kitaruth and the pastry chefs.
In itself, with these four destinations, LUX* Belle Mare succeeds brilliantly in capturing various culinary nuances, whether local or international and adapting them into an exquisite 5-étoile gastronomy. The journey is sensory, innovative and sometimes even surprising. The hotel’s sumptuous new surroundings seal in the experience with an admirable level of service and, at the same time, underline local hotel excellence.
