Amigo lance la deuxième saison de The Perfect Experience

Le concept « The Perfect Experience » a été conçu par Oxenham avec la collaboration de plusieurs restaurants et hôtels afin d’associer et d’accorder des plats avec des vins et des spiritueux dans le but créer des émotions et de faire vivre une expérience culinaire sans précédent.

Après le succès de The Perfect Experience en 2023, E.C. Oxenham, avec le soutien d’AfrAsia et de Phenicie, revient avec une deuxième édition qui implique cette fois cinq des meilleurs restaurants de l’île. C’est à Cap Malheureux, au célèbre restaurant de fruits de mer Amigo que le coup d’envoi a été donné le samedi 27 juillet. Le choix parfait pour commencer cette nouvelle expérience qui ravit les Épicuriens.

Il faut dire que, E.C. Oxenham s’est désormais fait un nom quand il s’agit d’organiser des dîners mets et vins dans une ambiance conviviale et chaleureuse. Women and Wine, The Perfect Dinner, Lux and Glamour, The Wine Route ont fait leurs preuves dans le passé. Cette fois Joëlle Dupré et Rachel Oxenham, les deux chevilles ouvrières du projet ont voulu associer les plaisirs de la table avec de la bonne musique. Le moins qu’on puisse dire c’est que les sens des invités au restaurant Amigo ont été ravis de cette soirée grâce aux plats goûteux du chef d’Amigo et à la voix suave de Stéphanie Noël.

Formé à Vatel et ayant acquis de l’expérience dans un grand restaurant parisien, Kavinen a su apporter la touche raffinée et les codes de la cuisine moderne au restaurant fréquenté par des célébrités de passage. Le menu concocté en était la preuve. En entrée des Gambas crues et carpaccio de poulpe, embrassées par les agrumes et les herbes. C’était une création d’Ambigah ressuscitée avec une touche d’alchimie moderne. Le tout était délicatement rehaussé par un sauvignon blanc Saxenbhurg 2021 choisi par les sommeliers d’Oxenham.

Avant de passer au plat nous avons eu droit à un Rassam de Crabe nous entraînant dans un voyage au cœur des côtes de sud de l’Inde. Cette version du « rasson » était d’une rare délicatesse et devait faire l’unanimité parmi les convives. Quant au plat principal, le Trésor du récif, c’était le plat signature d’Ambigah : les meilleurs fruits de mer tendrement caressés par les épices locales. Pour sublimer ce plat, les experts d’Oxenham avaient proposé un pinot noir AOP Côteaux Bourguignons, Antonin Rodet 2020.

 

 

Enfin, au dessert, c’était le mariage d’un grand classique avec une touche de modernité : la banane flambée délicatement enveloppée dans une feuille de brick arrosée d’un rhum Isautier de l’île de La Réunion. La barre était vraiment haute et les restaurants qui prendront le relais auront fort à faire.

Amigo launches the second season of The Perfect Experience

 

 

Following the success of The Perfect Experience in 2023, E.C. Oxenham, with the support of AfrAsia and Phenicie, is back with a second edition, this time involving five of the island’s finest restaurants. The event kicked off at the famous seafood restaurant Amigo in Cap Malheureux on Saturday 27 July. It was the perfect choice to kick off this new experience, which is sure to delight Epicureans.

It has to be said that E.C. Oxenham has made a name for itself when it comes to organising food and wine dinners in a warm and friendly atmosphere. Women and Wine, The Perfect Dinner, Lux and Glamour and The Wine Route have all proved their worth in the past. This time, Joëlle Dupré and Rachel Oxenham, the two driving forces behind the project, wanted to combine the pleasures of the table with good music. The least we can say is that the senses of the guests at the Amigo restaurant were delighted by this evening, thanks to the tasty dishes of the Amigo chef and the suave voice of Stéphanie Noël.

 

True to their tradition of excellence, the Parsuramen family pulled out all the stops to offer a menu that will be remembered for a very long time. The idea was to pay tribute to Amigah Parsuramen, the founder of the restaurant, who would have been 55 that day had he not been snatched from life when he was just 36. His wife Malinee, a truly courageous mother, took over the running of the restaurant and brought up their three children alone. Today, it is Kavinen, the eldest, who has taken over the reins, helped by his younger siblings Yovishen and Kovishen.

Trained at Vatel and having gained experience in a top Parisian restaurant, Kavinen has brought a refined touch and the codes of modern cuisine to a restaurant frequented by visiting celebrities. The menu was proof of this. For starters, raw prawns and octopus carpaccio, embraced by citrus fruits and herbs. It was an Ambigah creation brought back to life with a touch of modern alchemy. It was delicately enhanced by a Saxenbhurg 2021 sauvignon blanc chosen by Oxenham’s sommeliers.

Before moving on to the main course, we were treated to a Crab Rassam that took us on a journey to the heart of the South Indian coast. This version of ‘rasson’ was a rare delicacy, and was sure to win the unanimous approval of our guests. As for the main course, Trésor du récif, this was Ambigah’s signature dish: the finest seafood tenderly caressed by local spices. To enhance the dish, the experts at Oxenham suggested a pinot noir AOP Côteaux Bourguignons, Antonin Rodet 2020.

Finally, for dessert, it was the marriage of a great classic with a modern twist: flambéed bananas delicately wrapped in a sheet of brick pastry drizzled with Isautier rum from Réunion Island. The bar has been set high, and the restaurants that will follow will have a great challenge.
