Le palace de Grand Baie accueille dans son restaurant Asiya le chef étoilé Nicolas Isnard, devenu célèbre pour avoir revisité avec audace et perfection un classique de la cuisine française, la soupe à l’onion, en y rajoutant notamment une glace à l’onion. Loin de rester sur les richesses du terroir français, le chef étoilé a entrepris un long voyage culinaire qui l’a mené à Beijing, Dubai, Moscow, Singapore, Saigon, Casablanca, Manille, Djakarta, Kuala Lumpur, Macau et Abu Dhabi où il a installé son restaurant Bord Eau by Nicolas Isnard. C’est un aperçu de ce voyage qu’il nous propose lors de ces dîners du 15 au 17 mai.
En collaboration avec l’équipe du chef William Girard, aux commandes de la brigade du Royal Palm depuis 2022, le français Nicolas Isnard imagine un menu audacieux autour des saveurs de l’Asie. En préambule de cette soirée aux accents de l’Orient, son plat signature sera servi en amuse-bouche, pour le plus grand plaisir des palais en quête de surprises : la soupe à l’oignon 2.0, qui fait la renommée de son restaurant L’Auberge de la Charme, dans la Côte-d’Or. Un classique revisité en chaud-froid, tout en textures, comme une expérience exaltante pour les sens.
Le dîner se poursuivra avec une entrée froide venue de Chine – coquille Saint-Jacques, coriandre et menthe, cacahuètes et citron vert –, suivie d’un foie gras inspiré du Vietnam en entrée chaude. Le poisson du jour transportera les convives vers l’univers culinaire de la Thaïlande, et la viande – un filet de bœuf au maïs et ail noir avec sauce aux cacahuètes – fera la part belle à la cuisine vietnamienne. Enfin, le dessert mettra à l’honneur le thé vert, le tamarin et la cannelle, en clin d’œil à la Thaïlande. Ces trois dîners au restaurant Asiya sont ouverts à la clientèle de l’hôtel ainsi qu’à la clientèle locale souhaitant vivre l’expérience de cette belle collaboration.
Le voyage a toujours été au cœur de la vie de Nicolas Isnard. Comme une impulsion, cette envie de découvrir le monde lui est venue même avant la cuisine – il lui faudra plusieurs années pour apprendre à concilier ses deux passions et à transformer sa curiosité et son savoir-faire en un talent exceptionnel. Porté sur l’exploration et le métissage des goûts depuis son enfance, il mêle ses cultures française et méditerranéenne à travers des plats inventifs : les saveurs de la polenta et des gnocchis dansent avec celles du gigot du dimanche et des pommes sautées à l’ail et au thym.
Au fil du temps et des expériences, le voyage des saveurs et des ingrédients devient ainsi sa signature culinaire. Il est ce pilier autour duquel elle s’articule et qui infuse, par touches ou en toile de fond, dans ses recettes. Cette cuisine du voyage devient alors le moyen de fédérer, de parler aux autres et de faire découvrir ces goûts venus d’ailleurs. In its Asiya restaurant, the Grand Bay luxury hotel welcomes Michelin-starred chef Nicolas Isnard, who has become famous for his bold and perfect take on a classic French dish, onion soup, with onion ice cream. Far from sticking to the riches of the French terroir, the Michelin-starred chef has embarked on a long culinary journey that has taken him to Beijing, Dubai, Moscow, Singapore, Saigon, Casablanca, Manila, Jakarta, Kuala Lumpur, Macau and Abu Dhabi, where he has set up his Bord Eau by Nicolas Isnard restaurant. The dinners from 15 to 17 May offer a glimpse of this journey.
Working with the team of chef William Girard, who has been at the helm of the Royal Palm’s brigade since 2022, Frenchman Nicolas Isnard has devised an audacious menu based on the flavours of Asia. As a preamble to this Oriental-flavoured evening, his signature dish will be served as an amuse-bouche, to the delight of palates in search of surprises: onion soup 2.0, for which his restaurant L’Auberge de la Charme, in the Côte-d’Or, is famous. It is a classic revisited hot and cold, with all the textures of an exhilarating experience for the senses.
The dinner will continue with a cold starter from China – scallops, coriander and mint, peanuts and lime – followed by a hot starter of foie gras inspired by Vietnam. The fish of the day will transport diners to the culinary world of Thailand, and the meat – a fillet of beef with corn and black garlic and a peanut sauce – will give pride of place to Vietnamese cuisine. Finally, the dessert will feature green tea, tamarind, and cinnamon, with a nod to Thailand. These three dinners at the Asiya restaurant are open to hotel guests as well as to local guests wishing to experience this wonderful collaboration.
Travel has always been at the heart of Nicolas Isnard’s life. Like an impulse, this desire to discover the world came to him even before cooking – it took him several years to learn how to reconcile his two passions and transform his curiosity and know-how into an exceptional talent. With a penchant for exploring and blending tastes since childhood, he blends his French and Mediterranean cultures through inventive dishes: the flavours of polenta and gnocchi dance with those of Sunday leg of lamb and apples sautéed with garlic and thyme.
Over time and through experience, the journey of flavours and ingredients has become her culinary signature. It is the pillar around which her recipes are built and which infuses them, in dashes or as a backdrop. This travelling cuisine then becomes the means of uniting people, of speaking to others and of introducing them to tastes from elsewhere. Nicolas Isnard has run the Michelin-starred restaurant L’Auberge de la Charme since 2008.
