The Zarlor des Chefs: A Beautiful Culinary Encounter Between Mauritius and Réunion

A week filled with creativity, flavors, and connection. The Zarlor des Chefs à 4 mains, organized by the West Réunion Island Tourism Office (OTI Ouest) with the support of the Territoire de l’Ouest, the Mauritius Tourism Promotion Authority (MTPA), and the Blast Burson agency, brought together four Mauritian and four Réunionese chefs for a first-of-its-kind culinary encounter. A delicious celebration of shared heritage and innovation that united two neighboring islands through gastronomy.

A Flavorful Dialogue Between Two Islands

From September 29 to October 3, the partner hotels of Western Réunion — Ness by D-Ocean, LUX Saint Gilles, Le Relais de l’Hermitage*, and Dina Morgabine — hosted workshops, lunches, and tasting sessions open to the public. Each chef pairing explored a creative dialogue of flavors and traditions, showcasing their culinary artistry while highlighting local ingredients.
At Ness by D-Ocean, Mauritian chef Ram Appadoo (Château de Bel Ombre) joined forces with Fabien Caillebault for a Mediterranean-inspired culinary journey infused with island spices. At LUX* Saint Gilles, Tesigen Ramen (LUX* Grand Gaube, Mauritius) and Philippe Agesidame delighted guests with an inventive dessert workshop that balanced creativity, elegance, and indulgence.

Between Fire and Sweetness

At Le Relais de l’Hermitage, Iven Chithray, pastry chef at Constance Prince Maurice, teamed up with Mickael Moisson for a flavorful experience celebrating grillades and rougails — the very essence of Réunion’s Creole cuisine — with a refined pastry twist. Meanwhile, at Dina Morgabine, Emmanuel Fortuno (Constance Belle Mare Plage) and Mathieu Payet reimagined Mauritian and Réunionese appetizers, blending conviviality and color in a festive culinary symphony. The week concluded in style with a pop-up dinner at Vinocité in the Jardin d’Eden, where flavors from both islands came together in harmony.

A Collaboration Full of Meaning

According to Roxanne Pausé Damour, President of OTI Ouest, “The Zarlor des Chefs à 4 mains perfectly reflects our commitment to promoting the cultural and gastronomic richness of our region.”
A sentiment echoed by Avinash Teeluck, Director of the MTPA, who described it as “a wonderful opportunity to strengthen ties between our islands while positioning Mauritius as a gourmet and innovative destination.”

For Aisha Allee, Founder of Blast Burson, the event was “a joy — a culinary bridge between Mauritius and Réunion, where creativity and collaboration brought people together through flavor and artistry.”

A Taste of What’s to Come

Blending conviviality, talent, and authenticity, this first Mauritian participation in the Zarlor des Chefs à 4 mains was a resounding success. The cuisines of Mauritius and Réunion met, merged, and inspired — a true celebration of island craftsmanship.
Food lovers, take note: the next edition promises to be even more flavorful and inspiring!
