Pour remplacer l’iconique chef Kallooa à l’hôtel Ambre, il fallait un autre chef tout aussi talentueux. C’est désormais chose faite avec l’arrivée du chef Moothen Moorooghen, alias Kelley. Cet habitant de Flacq qui a fait ses débuts comme steward au Saint Géran revient aujourd’hui dans le groupe Sunlife chargé d’expériences.
Le chef Kelley a commencé sa carrière dans l’hôtellerie en 1988 en prêtant main-forte au golf du Saint Géran pendant les vacances scolaires. Inspiré par ceux qui travaillaient en cuisine, il décida très vite de se lancer dans l’expérience de la cuisine hôtelière. Malgré les salaires modestes et peu encourageants, Moothen a travaillé dur et son sérieux et son acharnement ont rapidement été repérés par le chef de l’hôtel à l’époque. Au bout de trois mois, ce dernier l’invita à rejoindre son équipe en cuisine et cette expérience l’a poussé à parfaire ses études dans le domaine en fréquentant l’École hôtelière gouvernementale des Casernes pendant six mois, combinant études le matin et travail l’après-midi. Moothen a énormément progressé au Saint Géran, où il travailla pendant neuf ans en tant que commis de cuisine. Toutefois, les opportunités étant limitées au Saint Géran, il rejoignit le Coco Beach en 1995 en tant que chef de partie.
Après un an et demi dans cet enseigne du groupe SUN, Moothen passa ensuite au Residence Mauritius. Il continua à gravir les échelons, devenant rapidement sous-chef, puis Executive sous-chef, et travailla pendant 20 ans dans le même établissement. Ce n’est qu’en 2017 qu’il décida de bouger à nouveau suite à l’opportunité de devenir sous-chef au Heritage Le Telfair, où il est d’ailleurs resté pendant 5 ans ,avant de passer à Heritage Awali en juillet 2022 en tant que sous-chef.
Désormais chef exécutif de l’hôtel Ambre, chef Kelley revient dans l’Est pour relever un nouveau défi. « Cette nouvelle aventure au sein de Sunlife à Ambre, est un réel challenge pour moi. Je souhaite exprimer ma créativité et créer une expérience culinaire haut de gamme et gastronomique dans les trois restaurants du resort », affirme le chef.
En sus de son amour pour la cuisine, chef Kelley est aussi un passionné de photographie culinaire. Il avait d’ailleurs remporté le prix de la meilleure photographie culinaire lors de la semaine de la gastronomie chez Heritage Resorts. En tant que chef exécutif de l’hôtel Ambre il aura la charge de trois restaurants : Indigo, la table principale de l’hôtel, La Plage, un repaire chic au bord de l’eau où les clients se régalent des prises du jour sous la lumière dorée du soleil couchant et la Dolce Vita qui sert généreusement des pâtes maisons, des pizzas au feu de bois et de grands crus italiens, le tout dans un décor digne de la Trattoria.
Chef Kelley Moothen becomes the new Executive Chef of the Ambre Hotel
To replace the iconic Chef Kallooa at the Ambre Hotel, another equally talented chef was needed. This has now been achieved with the arrival of chef Moothen Moorooghen, aka Kelley. The Flacq-born chef, who started as a steward at the Saint Géran, now returns to the Sunlife group with a wealth of experience.
Chef Kelley began his career in the hotel industry in 1988, helping out at the Saint Géran golf course during the school holidays. Inspired by those working in the kitchen, he soon decided to try his hand at hotel cooking. Despite the modest and uninspiring wages, Moothen worked hard and his seriousness and relentlessness were quickly spotted by the hotel chef at the time. After three months, he was invited to join his team in the kitchen, and this experience encouraged him to further his studies in the field by attending the Government Hotel School in Les Casernes for six months, combining study in the morning with work in the afternoon. Moothen progressed enormously at Le Saint Géran, where he worked for nine years as a kitchen assistant. However, opportunities were limited at Le Saint Géran, so he joined Coco Beach in 1995 as chef de partie.
After a year and a half at this member of the SUN group, Moothen moved on to Residence Mauritius. He continued to climb the ranks, quickly becoming sous-chef, then executive sous-chef, and worked for 20 years in the same establishment. It was only in 2017 that he decided to move again following the opportunity to become Sous Chef at Heritage Le Telfair, where he stayed for 5 years, before moving to Heritage Awali in July 2022 as Sous Chef.
Now Executive Chef of the Ambre Hotel, Chef Kelley returns to the East for a new challenge. ‘This new adventure with Sunlife in Ambre is a real challenge for me. I want to express my creativity and create an upscale, gourmet dining experience in the resort’s three restaurants,’ says the chef.
In addition to his love of cooking, Chef Kelley is also passionate about food photography. He won the prize for best culinary photography during Heritage Resorts’ gastronomy week. As Executive Chef of the Hotel Ambre, he will be in charge of three restaurants: Indigo, the hotel’s main table; La Plage, a chic waterside hideaway where guests feast on the catch of the day under the golden light of the setting sun; and La Dolce Vita, which generously serves homemade pasta, wood-fired pizzas and fine Italian wines, all in a setting worthy of a Trattoria.
