Le Royal Palm Beachcomber Luxury a un nouveau Chef Pâtissier Exécutif en la personne de Stephan Baptiste. Ce jeune chef d’abord formé à l’Ecole Hôtelière Sir Gaëtan Duval à l’île Maurice, puis en Belgique dans le restaurant étoilé Le Chalet de la Forêt, auprès des meilleurs pâtissiers belges, compose depuis le 8 juillet les nouvelles signatures sucrées du cinq-étoiles luxury du pionnier de l’hôtellerie mauricienne.
Né de parents mauriciens en Zambie, où il passe une partie de son enfance, le Chef Stephan Baptiste commence son apprentissage en pâtisserie à l’Ecole Hôtelière Sir Gaëtan Duval. En 2003, il fait ses premiers pas au Victoria Beachcomber Resort & Spa, aux côtés de deux grands chefs, Paul Ng et Simon Carnel, qui seront ses mentors et lui feront découvrir la beauté de ce métier. Puis sa route croise celle du Chef Nizam Peeroo, auprès duquel il prend son envol.
Son parcours à l’international débute en 2013. Le Chef Stephan Baptiste rejoint Le Châlet de la Forêt, restaurant doublement étoilé au Guide Michelin. Aux côtés des chefs Kasper Kurdahl et Pascal Devalkeneer, il se distingue par ses associations et ses compositions toute en fraîcheur.
De retour à Maurice en 2017, il était jusqu’au mois de juin dernier, aux commandes de la brigade de pâtisserie d’une adresse hôtelière 5-étoiles de la côte ouest. Au Royal Palm, où il est le nouveau Chef Pâtissier Exécutif, Stephan Baptiste insuffle son audace et sa créativité dans l’offre de desserts et de pâtisseries de l’établissement emblématique.
Son inspiration, il le puise de ses souvenirs d’enfance avec son père le chef Wilson Baptiste, du terroir,de l’éclat et de l’âme du Royal Palm pour des créations gourmandes et audacieuses : le parfait au miel du jardin du Royal Palm, le cheese cake à la vanille et au citron vert de l’Ile Maurice, les macarons aux saveurs tropicales et fleur de sel, le crémeux au chocolat guanaja rehaussé à l’orange et au caramel au beurre salé, accompagné d’une glace à la vanille, ou encore le parfait au chocolat blanc et aux fruits de la passion, accompagné d’un sorbet rouge.
« Je suis heureux d’intégrer la prestigieuse brigade du Royal Palm et de revenir chez Beachcomber Resorts & Hotels où il y a 19 ans, j’ai débuté comme pâtissier », dit le Chef Stephan Baptiste. « La nouvelle carte de desserts et de pâtisseries sera tendance et saine et le tout sans faire impasse sur le côté gourmand. Il m’importe aussi de créer des pâtisseries selon la saison et d’honorer les produits du terroir ».

Royal Palm Beachcomber Luxury appoints Stephan Baptiste as Executive Pastry Chef
Stephan Baptiste is the new Executive Pastry Chef of The Royal Palm Beachcomber Luxury. This young chef, who first trained at the Sir Gaëtan Duval Hotel School in Mauritius, then in Belgium at the starred restaurant Le Chalet de la Forêt, with the best Belgian pastry chefs, has been composing the new sweet signatures of the five-star luxury hotel of the Mauritian hotel pioneer since 8 July.
Born to Mauritian parents in Zambia, where he spent part of his childhood, Chef Stephan Baptiste began his pastry apprenticeship at the Sir Gaëtan Duval Hotel School. In 2003, he took his first steps at the Victoria Beachcomber Resort & Spa, alongside two great chefs, Paul Ng and Simon Carnel, who were to be his mentors and help him discover the beauty of this profession. Then his path crossed with Chef Nizam Peeroo, with whom he took off.
His international career began in 2013. Chef Stephan Baptiste joined Le Châlet de la Forêt, a restaurant with two Michelin stars. Alongside chefs Kasper Kurdahl and Pascal Devalkeneer, he distinguishes himself by his associations and his fresh compositions.
Back in Mauritius in 2017, he was until last June in charge of the pastry brigade of a 5-star hotel on the west coast. At the Royal Palm, where he is the new Executive Pastry Chef, Stephan Baptiste infuses his boldness and creativity into the iconic establishment’s dessert and pastry offerings.
He draws his inspiration from his childhood memories with his father, Chef Wilson Baptiste, and from the terroir, brilliance and soul of the Royal Palm for bold, gourmet creations: the honey parfait from the Royal Palm garden, the vanilla and lime cheese cake from Mauritius, the macaroons with tropical flavours and fleur de sel, the guanaja chocolate cream with orange and salted butter caramel, accompanied by vanilla ice cream, or the white chocolate and passion fruit parfait, accompanied by a red sorbet.
« I am delighted to join the prestigious Royal Palm brigade and to return to Beachcomber Resorts & Hotels where I started 19 years ago as a pastry chef, » says Chef Stephan Baptiste. « The new dessert and pastry menu will be trendy and healthy, without compromising on the gourmet side. It is also important to me to create pastries according to the season and to honour local products.
At the Royal Palm, Chef Stephan Baptiste will work alongside Executive Chef William Girard. « Stephan Baptiste is a passionate person with immense talent and a remarkable background, which will allow us to go even further in creating new subtle and delicate promises, » says Chef William Girard.
