La Semaine Île Bourbon 2026 : un dîner de gala à dix mains pour célébrer les saveurs des îles

Pendant une semaine, les cuisines de Heritage Resorts & Golf ont vibré au rythme de La Réunion. Mais c’est dans le décor spectaculaire de La Réserve Golf Links que la Semaine Île Bourbon 2026 a trouvé son apothéose : un dîner de gala à dix mains réunissant chefs mauriciens et réunionnais autour d’un menu pensé comme une traversée gourmande de l’océan Indien.

Du 4 au 9 mai 2026, l’événement a transformé le sud de Maurice en véritable carrefour des cultures culinaires insulaires. Dîners thématiques, masterclass, dégustations, ateliers autour des plantes aromatiques et échanges autour du patrimoine créole ont ponctué cette nouvelle édition devenue incontournable dans le calendrier gastronomique mauricien.

Dix chefs, dix sensibilités,

Cette année encore, plusieurs figures majeures de la gastronomie réunionnaise avaient fait le déplacement : Murielle Michaeli, Jofrane Dailly, Kévin Minatchy, Claude Pothin et Julien Leveneur, accompagnés du critique culinaire Thierry Kasprowicz et du tisanier Fabris Thémyr. Ensemble, ils ont multiplié les collaborations avec les équipes de Heritage Resorts & Golf dans différents lieux emblématiques du domaine, notamment Gin’Ja, Savana, le Château de Bel Ombre et La Réserve Golf Links.

Mais le moment le plus attendu restait sans conteste le dîner de gala final. Dix chefs, dix sensibilités, une même volonté : raconter les identités culinaires de Maurice et de La Réunion à travers les produits, les épices, les textures et les souvenirs.

Le menu s’ouvrait sur un amuse-bouche signé Kévin Minatchy et Akash Nunkoo autour d’un croustillant de patate douce à la morue, accompagné d’un coulis de tomate au poivron fumé, d’une émulsion de persil au beurre noisette, d’olives Kalamata et d’une mayonnaise au safran péi. Une entrée en matière à la fois réconfortante et précise, jouant sur les marqueurs populaires de la cuisine créole.

La suite prenait une tournure plus gourmande avec la terrine de foie gras au rhum Isautier ananas imaginée par Arlando René et Murielle Michaeli. Entre chutney d’ananas au piment doux, gel tamarin et pain d’épices, l’assiette assumait pleinement le dialogue entre tradition française et parfums tropicaux.

Le plat autour du thon rouge, proposé par Jofrane Dailly et Ved Hurry, s’imposait comme l’un des temps forts du repas. Le poisson, relevé au massalé, était accompagné d’une fricassée de lentilles de Cilaos, de légumes croquants, d’achards de calebasse et d’un bouillon Larson délicatement épicé. Une création profondément ancrée dans les terroirs réunionnais et mauriciens.

Création sophistiquée

Autre moment marquant : le suprême de volaille fermière imaginé par Noël Bergicourt et Claude Pothin. Mariné au curcuma puis servi avec un condiment coco, du chouchou confit, une mousseline de patate douce au Galabé et un jus corsé au lait de coco et combava, le plat jouait sur l’équilibre entre douceur, fraîcheur et intensité aromatique.

Le dessert de Julien Leveneur et Benee Luchman concluait ce voyage sur une note élégante et végétale : cœur de palmiste confit au sirop de Galabé, crémeux arrow-root, crumble muscovado, glace coco fumée et vanille givrée, siphon de mélasse, chips de palmiste et gel tamarin. Une création sophistiquée où chaque élément évoquait les saveurs des îles sans jamais tomber dans la démonstration.

Les accords mets et vins avaient eux aussi été soigneusement construits. Un Sauvignon Blanc du Domaine Joël Delaunay ouvrait le bal avant un Riesling de Kloster Eberbach sur l’entrée. Les plats principaux étaient accompagnés d’un Viognier du Domaine Philippe & Vincent Jaboulet pour le thon rouge et d’un Chardonnay du Domaine de Montille pour la volaille. Le dessert, lui, s’accordait à Takamaka Éclipse dans une finale tout en rondeur.

Plus qu’un simple événement gastronomique, la Semaine Île Bourbon confirme année après année son rôle de passerelle culturelle entre Maurice et La Réunion. Une célébration vivante des cuisines de l’océan Indien, entre mémoire, créativité et transmission.

Island Bourbon Week 2026: a ten-hand gala dinner celebrating the flavours of the islands

For one week, the kitchens of Heritage Resorts & Golf moved to the rhythm of Réunion Island. Yet it was at the spectacular setting of La Réserve Golf Links that Island Bourbon Week 2026 reached its grand finale: a ten-hand gala dinner bringing together Mauritian and Réunionese chefs around a menu conceived as a gourmet journey across the Indian Ocean.

From 4 to 9 May 2026, the event transformed southern Mauritius into a true crossroads of island culinary cultures. Themed dinners, masterclasses, tastings, workshops dedicated to aromatic plants and discussions around Creole heritage all shaped this new edition, which has now become a key event on the Mauritian gastronomic calendar.

Ten chefs, ten culinary identities

This year once again, several leading figures of Réunion’s culinary scene travelled to Mauritius: Murielle Michaeli, Jofrane Dailly, Kévin Minatchy, Claude Pothin and Julien Leveneur, alongside food critic Thierry Kasprowicz and herbal specialist Fabris Thémyr. Together, they collaborated closely with the teams of Heritage Resorts & Golf across the estate’s iconic venues, including Gin’Ja, Savana, Château de Bel Ombre and La Réserve Golf Links.

But the most anticipated moment of the week was undoubtedly the final gala dinner. Ten chefs, ten culinary identities, united by a shared ambition: to tell the story of Mauritian and Réunionese gastronomy through ingredients, spices, textures and memories.

The menu opened with an amuse-bouche created by Kévin Minatchy and Akash Nunkoo featuring crispy sweet potato and cod fritter, served with smoked pepper tomato coulis, parsley brown butter emulsion, Kalamata olives and local saffron mayonnaise. It was an opening course that felt both comforting and refined, revisiting familiar Creole flavours with precision.

The next course moved into richer territory with a foie gras terrine infused with Isautier pineapple rum, imagined by Arlando René and Murielle Michaeli. Pineapple chutney with mild chilli, tamarind gel and gingerbread created a sophisticated balance between French culinary heritage and tropical aromas.

The red tuna course by Jofrane Dailly and Ved Hurry stood out as one of the highlights of the evening. The fish, seasoned with massalé spices, was paired with a fricassée of Cilaos lentils, crunchy vegetables, calabash pickles and a delicately spiced Larson broth. The dish was deeply rooted in both Réunionese and Mauritian terroirs.

Sophisticated composition

Another memorable creation came from Noël Bergicourt and Claude Pothin with their turmeric-marinated free-range chicken supreme. Served with coconut condiment, confit chouchou, Galabé sweet potato mousseline and an intense coconut milk and combava jus, the plate explored a subtle interplay of sweetness, freshness and aromatic depth.

Dessert, crafted by Julien Leveneur and Benee Luchman, concluded the evening on an elegant and vegetal note: heart of palm candied in Galabé syrup, arrow-root cream, muscovado crumble, smoked coconut ice cream with iced vanilla, molasses siphon, palm chips and tamarind gel. A sophisticated composition where every element evoked island flavours without excess.

Wine pairings were also carefully curated throughout the evening. A Sauvignon Blanc from Domaine Joël Delaunay accompanied the amuse-bouche, followed by a Riesling from Kloster Eberbach for the starter. The main courses were paired with a Viognier from Domaine Philippe & Vincent Jaboulet for the tuna and a Chardonnay from Domaine de Montille for the chicken. Dessert was matched with Takamaka Éclipse, bringing the evening to a smooth and generous finish.

More than a gastronomic event, Island Bourbon Week continues to strengthen its role as a cultural bridge between Mauritius and Réunion Island. A vibrant celebration of Indian Ocean cuisines, where memory, creativity and transmission meet around the table.
