Chef Paramasudhan Murday : ambassadeur de la gastronomie mauricienne à Munich

La cuisine mauricienne et les produits de notre terroir traversent de plus en plus le globe grâce aux nombreux talents culinaires qui se trouvent sur l’île. Cette fois-ci, c’est le Chef Paramasudhan Murday qui a fait voyager notre gastronomie jusqu’aux prestigieux restaurants Bavarie by Käfer et Ess-Zimmer (2 étoiles Michelin) du célèbre BMW Welt à Munich. Pendant quatre soirées, le talentueux chef du Trou aux Biches Beachcomber Golf Resort & Spa a pris les rênes des cuisines en compagnie des chefs étoilés Bobby Bräuer et Henning Aldag pour dévoiler tout le potentiel et les saveurs locales.

 

Le voyage gustatif a commencé par un apéritif mettant en avant les délices traditionnels de la cuisine mauricienne, tels que les gâteaux piments et les samoussas. En entrée, une subtile combinaison de saveurs avec du carpaccio de poulpe accompagné d’une vinaigrette à la mangue et du marlin fumé agrémenté d’une vinaigrette au chutney de coco. En plat principal, le Chef Murday a réinventé des classiques, proposant une délicieuse vindaye de truite avec une fricassée de lentilles, du porc mariné et laqué au tamarin, relevé d’une sauce salmi et grillé au barbecue, ainsi qu’une noix d’agneau confite, sublimée par une sauce rougaille épicée. Et pour terminer en beauté ces soirées gastronomiques, des desserts à base d’ananas ont apporté une note de fraîcheur tropicale. Des propositions qui ont su traduire le savoir-faire et l’expérience du chef et de ses acolytes.

Les quatre soirées au BMW Welt ont connu un grand succès, affichant complet et laissant un souvenir mémorable à tous les convives. « C’était une fierté et un grand plaisir de faire découvrir aux clients ainsi qu’aux brigades des restaurants Bavarie by Käfer et Ess-Zimmer, les multiples facettes de l’art culinaire de l’île Maurice et de partager l’univers gastronomique distinct de Beachcomber. J’avais amené dans ma valise 50 kg d’épices et autres aromates incontournables qui font la richesse et la saveur de nos plats locaux », déclare le Chef Paramasudhan Murday qui a fait par la même occasion briller Beachcomber Resorts & Hotels.

Chef Paramasudhan Murday: an ambassador of Mauritian gastronomy in Munich

Mauritian cuisine and the products of our land are increasingly crossing the globe thanks to the many culinary talents on the island. This time, it was Chef Paramasudhan Murday who took our gastronomy to the prestigious Bavarie by Käfer and Ess-Zimmer restaurants (2 Michelin stars) in Munich’s famous BMW Welt. For four evenings, the talented chef from Trou aux Biches Beachcomber Golf Resort & Spa took the reins of the kitchens with Michelin-starred chefs Bobby Bräuer and Henning Aldag to reveal the full potential of local flavours.

 

The culinary journey began with an aperitif featuring traditional Mauritian delicacies such as chilli cakes and samoussas. The starter was a subtle combination of flavours, with octopus carpaccio with mango vinaigrette and smoked marlin with coconut chutney vinaigrette. For the main course, Chef Murday has reinvented some classics, offering a delicious trout vindaye with a fricassee of lentils, tamarind-glazed marinated pork with a salmi sauce and barbecued, and a confit of lamb with a spicy rougaille sauce. And to round off these gastronomic evenings in style, pineapple-based desserts added a touch of tropical freshness. A range of dishes that reflected the expertise of our chefs.

The four evenings at BMW Welt were a great success, selling out and leaving a memorable impression on all guests. « It was a great pleasure and a source of pride for me to introduce the guests and staff of the Bavarie by Käfer and Ess-Zimmer restaurants to the many facets of Mauritian culinary art and to share Beachcomber’s distinct gastronomic universe. I had brought 50 kg of spices and other essential herbs in my suitcase, which gives our local dishes their richness and flavour, » says Chef Paramasudhan Murday, who also helped Beachcomber Resorts & Hotels to shine.
