En prélude à sa nouvelle carte, le chef a organisé trois dîners avec un menu dégustation intitulé « A Gastronomic Symphony », sublimé par un accord mets-vins soigneusement élaboré avec les crus du domaine sud-africain Klein Constantia. Une ouverture gourmande et inattendue
Le voyage commence par une bouchée aussi surprenante que délicieuse : le Green peas–Goat’s Cheese Naan Bomb. Ce pain indien farci au fromage de chèvre et pois verts, accompagné d’un houmous de pois chiches au goût prononcé, d’un crumble piment–cacahuètes et de radis marinés, met les papilles en éveil. Un premier mouvement rythmé, porté par la fraîcheur du Klein Constantia Riesling 2022. Un vin dominé par les notes d’agrumes et de fleurs blanches qui se marie bien avec les plats épicés en général, nous assurait Fleur Edel Seebundhun, sommelière de Grays, maison importatrice de ce vin de Constance qui a une relation historique avec Maurice.
Épure et élégance marine
Suit un plat de Turbot aux herbes, délicatement accompagné d’asperges blanches, d’huile d’herbes, de noix de coco tendre et de sundal au cœur de palmier. Les notes citronnées et le gingembre croustillant apportent relief et équilibre. C’est une assiette qui célèbre la subtilité, sans superflu.
Lobster en crescendo
La langouste aux feuilles de curry marque un tournant plus audacieux. Le plat se déploie avec un upma aux champignons sauvages, un korma aux champignons pimentés et de généreuses lamelles de truffe. L’onctuosité de la langouste est un vrai ravissement pour le palais. Il résulte d’une macération dans des épices la veille de la cuisson, nous révèle chef en toute amitié. En parfaite harmonie, le Klein Constantia Chardonnay 2023 vient enrober le tout d’une rondeur délicate.
L’âme en bouche
Le Carré d’agneau fumé, accompagné de jus de lentilles noires, de khichdi à la betterave et de billes de betterave, évoque les grands plats familiaux réinterprétés avec virtuosité, le kichdi étant un plat phare de la cuisine indienne par sa simplicité mais aussi pour ses vertus thérapeutiques. Il s’accorde parfaitement avec le Klein Constantia Red Blend 2022, aux notes profondes et structurées.
Un final tout en douceur Le dessert Ananas caramélisé — avec rasmalai, kulfi au safran et lait à la verveine — signe un final sucré, floral et réconfortant. Un hommage vibrant à la gourmandise indienne contemporaine.

The performance opens with the playful Green peas–Goat’s Cheese Naan Bomb. This is not just a dish—it’s a conversation starter. Crisp yet pillowy naan cradles a creamy goat cheese filling, while the accompaniments—Punjabi chickpea hummus, a piment-peanut crumble, and tangy radish—dance on the palate. Next, the Herb Turbot brings a touch of the sea with finesse. Served with white asparagus, herb oil, and a tender coconut infusion, the dish is a study in balance and purity. The citrus and palm heart sundal add complexity, and the crisp ginger delivers a final high note. Unpaired, this dish stands as a revelation; it needs no enhancement.
A Bold Play of Earth and Ocean
The Curry Leaf Lobster introduces a bolder chapter. Rich, succulent lobster is nestled on a wild mushroom-upma, while chili mushroom korma and truffle shavings add umami and heat. The creaminess of the lobster is a real treat for the palate. It is the result of maceration in spices the day before cooking,’ reveals the chef in a friendly manner. Here, the Klein Constantia Chardonnay 2023 enters with confidence—its creamy undertones and restrained oak perfectly match the lobster’s intensity.
A Poultry Aria
Then comes the Sun-dried Tomato Quail, served with pine nut spinach spelt and a white tomato sauce that surprises and soothes in equal measure. The tomato dust elevates the dish with concentrated depth, presenting a vibrant interplay of acidity and earthiness. It’s a thoughtful, poetic middle movement in this symphony.
Meat, Rooted in Soul
The Smoked Lamb Chop is a soulful nod to Indian home-cooking traditions, but with a gourmet twist. Black lentil–lamb jus, beetroot khichdi, and beetroot marbles showcase deep, smoky notes and earthy sweetness. The Klein Constantia Red Blend 2022 adds structure and warmth, echoing the dish’s rich complexity and providing a full-bodied harmony.
A Sweet Finale
The crescendo comes in the form of Caramelised Pineapple, paired with rasmalai, saffron kulfi, and verbena milk. It’s a dessert that honors Indian nostalgia while embracing modern flair—both indulgent and refreshing. Hints of floral and spice leave the palate humming, long after the final spoonful.
