Après un démarrage sur les chapeaux de roues, la deuxième soirée de The Perfect Experience n’a pas déçu. Situé au cœur de Choisy Les Bains, Flavours Gourmet a été exact au rendez-vous avec une soirée de cuisine fusion réalisée de main de maître par le jeune chef Emmanuel Wong avec le coup de main de l’équipe d’Oxenham pour l’accompagnement des plats avec un choix de vins judicieux.
Il y a de plus en plus d’adresses offrant de la cuisine asiatique (comprenons surtout japonaise) mais peu sont celles qui maîtrisent cet art de la bonne combinaison des divers ingrédients et surtout une constance au niveau du goût. Le Flavours Gourmet est de celles-là. Le mérite en revient à Emmanuel Wong, Emmanuel Wong, le chef exécutif qui s’est spécialisé en sushis. Dirigeant une brigade de 15 chefs, il propose une cuisine fusion où il laisse libre cours à son imagination.
Après un court passage au restaurant de La Balise Marina, il revient au Hennessy où il aura l’occasion de travailler avec un autre spécialiste de la cuisine japonaise, le célèbre chef Ketsi. Après deux ans, il commence une nouvelle aventure avec le Flavours Gourmet à Rivière Noire puis Authentique à Tamarin. Cette année, le restaurant installe une troisième enseigne à Mont Choisy Les Bains avec toujours une carte de fusion japonaise et méditerranéenne mais avec une touche plus raffinée.
Pour le dîner du 4 juin, il avait mis les petits dans les grands ouvrant la soirée avec des tempuras de thon et de courgette en des crevettes sautées au vin et à l’ail en amuse-bouche avec le désormais incontournable Pinkdemic. L’entrée fut certainement la démonstration du talent d’Emmanuel pour la cuisine asiatique avec un carpaccio de thon et de saumon à la japonaise, sushi California roll de foie gras et un foie gras de canard poêlé avec une crêpe et une sauce tamarin. On a senti là, un plat inspiré du canard laqué. Servi avec un sauvignon Blanc, Buitenverwachting 2021, ce fut un régal.
Pour le plat principal, si le carré d’agneau était honnête, l’accompagnement, une purée de pomme de terre à la truffe et une sauce poivre, était tout simplement réussi quoique trop copieux à notre avis. Quant au vin, un AOP Margaux, Cantenac Brown, 3e Grand Cru Classé Brio, 2016, il était tout simplement exceptionnel. Pour couronner ce somptueux repas, le dessert en trompe-l’œil de sushis fut aussi surprenant que délicieux. Servi avec un Isauthier Banane Flambée, liqueur réunionnaise d’exception, il apporte la note sucrée qui conclut une très belle soirée réussie. Rendez-vous est maintenant pris pour le samedi 25 juin au tout nouveau restaurant N’Joy à Grand Baie.
The Perfect Experience: fusion and trompe-l’oeil at Flavours Gourmet
After a great start, the second evening of The Perfect Experience did not disappoint. Located in the heart of Choisy Les Bains, Flavours Gourmet was right on target with an evening of fusion cuisine masterfully executed by young chef Emmanuel Wong with the help of the Oxenham team for the accompaniment of the dishes with a judicious choice of wines.
There are more and more places offering Asian cuisine (especially Japanese) but few have mastered the art of combining the various ingredients and, above all, the consistency of the taste. Flavours Gourmet is one of them. The credit goes to Emmanuel Wong, Emmanuel Wong, the executive chef who specialises in sushi. Leading a brigade of 15 chefs, he offers a fusion cuisine where he lets his imagination run wild.
It must be said that Emmanuel, who has been behind the stove for almost nine years, has a strong background. His grandfather, then his father, and his uncles ran the Coromandel Restaurant, located in the place of the same name. After training in a private cookery school in Quatre Bornes, he did an internship at the Hennessy Park Hotel and then moved on to other hotels. In 2017, he worked at the One and Only Le St Géran, where he met the Michelin-starred chef, Marc de Passario, who introduced him to the world of sushi.
After a short stint at the La Balise Marina restaurant, he returned to the Hennessy where he had the opportunity to work with another Japanese cuisine specialist, the famous chef Ketsi. After two years, he started a new adventure with Flavours Gourmet in Rivière Noire and then Authentique in Tamarin. This year, the restaurant is opening a third location in Mont Choisy Les Bains with a Japanese-Mediterranean fusion menu but with a more refined touch.
For the dinner on June 4th, he had put the small in the big opening the evening with tempuras of tuna and zucchini and shrimps sautéed in wine and garlic as an appetizer with the now unavoidable Pinkdemic. The starter was certainly a demonstration of Emmanuel’s talent for Asian cuisine with a Japanese-style tuna and salmon carpaccio, a California sushi roll with foie gras and a pan-fried duck foie gras with a crêpe and tamarind sauce. We felt this was a dish inspired by Peking duck. Served with a Sauvignon Blanc, Buitenverwachting 2021, it was a treat.
For the main course, if the rack of lamb was honest, the accompaniment, a truffle mashed potato and pepper sauce, was simply successful although too copious in our opinion. As for the wine, an AOP Margaux, Cantenac Brown, 3rd Grand Cru Classé Brio, 2016, it was simply outstanding. To crown this sumptuous meal, the trompe-l’oeil dessert of sushi was as surprising as it was delicious. Served with an Isauthier Banane Flambée, an exceptional Reunionese liqueur, it provided the sweet note that concluded a very successful evening. We now yearn for the third rendezvous on Saturday 25 June at the brand-new restaurant N’Joy in Grand Baie.
