Mondial du Pain 2025 : une 9ᵉ place historique pour Maurice

Pour sa première participation au Mondial du Pain – Goût & Nutrition, qui s’est tenu du 19 au 22 octobre à Nantes en France, l’équipe mauricienne a créé la surprise en se classant 9ᵉ sur 21 nations. Une performance remarquable qui consacre des mois de travail, d’audace et de passion, et qui inscrit la boulangerie mauricienne sur la carte mondiale de la profession.

Sous la houlette de leur coach Sabeer Hookoomally, le boulanger Shezad Sahye et son commis Farhaan Moosuddee ont porté haut les couleurs de Maurice lors de ce concours d’envergure internationale organisé à Nantes dans le cadre du salon SERBOTEL. Après deux jours d’épreuves intensives – entre pains classiques, créations originales, viennoiseries, sandwichs, tartines et pièce artistique – le duo mauricien a séduit le jury par son concept culinaire profondément ancré dans le terroir.

Leur démarche : raconter Maurice à travers ses pains. Les candidats ont puisé dans la culture populaire pour revisiter les saveurs du quotidien – gato pima, dipin vinday, macatia coco, anana disel pima ou encore salmis – transposées dans les recettes du concours. Un hommage vibrant à la street food mauricienne, réinterprétée avec rigueur technique et créativité.

Fidèles à une démarche durable et identitaire, les boulangers ont travaillé exclusivement des produits locaux : ananas Victoria, cacao de Chamarel, roselle, limon de Rodrigues, arouille, sucre, mélasse, coco et même cerf mauricien. Chaque ingrédient racontait une histoire, transformant les pains et viennoiseries en vitrine du patrimoine agricole et culinaire de l’île.

« Nous avons voulu présenter Maurice à travers nos pains et viennoiseries. Cette expérience fondatrice nous permet de mesurer le niveau international et d’apprendre pour mieux revenir », confie Sabeer Hookoomally.

Pour Shezad Sahye, cette aventure marque un tournant : « Représenter mon pays au Mondial du Pain a été un honneur immense. J’en ressors grandi et plus motivé que jamais à transmettre ce savoir-faire. »

Julien Audibert, General Manager de Les Moulins de la Concorde (LMLC) – partenaire de l’équipe – souligne l’importance de cette participation :

« L’équipe a porté haut les couleurs de Maurice en partageant notre identité culinaire et la richesse de nos produits. C’est une étape clé pour la filière boulangère et une source d’inspiration pour toute une génération. »

Soutenue notamment par le groupe Beachcomber, cette aventure humaine et professionnelle confirme que la boulangerie mauricienne a toute sa place sur la scène mondiale. Avec cette 9ᵉ place historique, Maurice prouve qu’elle sait conjuguer authenticité, innovation et excellence – et que ce n’est là qu’un début.

World Bread Contest 2025: A Historic 9th Place for Team Mauritius

For its very first participation in the World Bread Contest – Taste & Nutrition, which was held from the 19th to the 22nd October, Team Mauritius made a stunning debut by claiming 9th place out of 21 nations. A remarkable performance that celebrates months of dedication, creativity, and teamwork — and marks the official entry of Mauritian bakery on the world stage.

Led by coach Sabeer Hookoomally, baker Shezad Sahye and his assistant Farhaan Moosuddee represented Mauritius with pride during this prestigious international competition held in Nantes, as part of the SERBOTEL trade show. Over two demanding days, the team competed in various categories – from classic breads to original creations, viennoiseries, sandwiches, tartines, and an artistic showpiece – impressing the jury with a unique culinary concept rooted in Mauritian identity.

Their bold idea: telling the story of Mauritius through bread. The team reimagined beloved local street food and everyday snacks — gato pima, dipin vinday, macatia coco, anana disel pima, salmis — transforming them into refined bakery creations. Each piece reflected the soul of Mauritian cuisine, blending tradition with technical mastery.

Staying true to their commitment to sustainability and authenticity, the bakers chose to work exclusively with local ingredients: Victoria pineapple, Chamarel criollo cocoa, tangy roselle, Rodrigues lime, taro root, cane sugar and molasses, coconut, and even venison. These emblematic flavors became edible ambassadors of the island’s agricultural and culinary heritage.

“We wanted to present Mauritius through our breads and pastries,” explains coach Sabeer Hookoomally. “This first participation is a founding experience – a way to learn, grow, and return stronger.”

For Shezad Sahye, the journey has been transformative: “Representing my country at the World Bread Contest was an immense honor. I come back more inspired than ever to share this know-how and encourage young Mauritian bakers.”

According to Julien Audibert, General Manager of Les Moulins de la Concorde (LMLC) – official partner of the team – this achievement goes far beyond competition:

“The team proudly showcased our culinary identity and the richness of our local products. It’s a major step for the Mauritian bakery industry and a true source of inspiration for the future.”

Supported by Beachcomber Group and coordinated by Les Moulins de la Concorde, the Mauritian participation in the World Bread Contest 2025 stands as a milestone. With this historic 9th place, Mauritius has proven its ability to blend authenticity, innovation, and excellence — and this is only the beginning.
