Tous les chefs ne sont pas nécessairement tombés dans la marmite durant leur enfance ; parfois le choix d’une carrière est dicté par la nécessité ou l’environnement. Quant à l’excellence, il est le fruit d’une motivation sans cesse entretenue. C’est le cas de Vishal Marday, aujourd’hui chef exécutif au Preskil Island Resort. Auréolé d’une forte expérience à l’international, il a pris cette responsabilité avec l’ambition de faire de ce joyau du groupe Beau Vallon Hospitality une référence dans la gastronomie dans le sud-est de l’île. Portrait d’un chef au parcours inspirant.
Né à Lallmatie dans une famille modeste, Vishal suivra sa mère à Bramsthan, Flacq après le décès de son père. En l’absence de sa mère, tôt levée pour aller travailler aux champs et revenant souvent tard le soir, le jeune Vishal devait préparer ses repas sans pour autant développer une passion pour la cuisine. C’est l’environnement immédiat avec bon nombre de personnes de l’Est travaillant dans l’hôtellerie qui l’incite à s’inscrire pour une formation en cuisine à l’École hôtelière en 1997. Mais la motivation de Vishal dépasse le simple besoin de trouver un travail ; il a bien vite compris que l’hôtellerie pouvait lui ouvrir les portes d’une carrière à l’international, son ambition secrète.
Vishal ne s’épargne aucun effort pour y arriver. Après ses cours en journée, il fait l’alternance la nuit à l’hôtel Ambre. Son diplôme en poche, il travaillera seulement une année à Silver Beach Hotel avant de pouvoir réaliser son rêve. Première destination, le prestigieux Ritz Carlton à Dubaï, où il débute comme commis avant de passer à chef de partie.
Puis il enchaînera à l’Emirates Palace /Kempinski à Abhu Dhabi comme sous-chef avant de revenir à Dubaï pour le groupe Emaar Hospitality où il sera promu au poste de Head Chef après deux ans. Dans tous ces hôtels, Vishal travaillera essentiellement dans les restaurants signature.
En 2015, pour des raisons familiales, Vishal décide de rentrer au pays. Il travaillera comme chef de cuisine à Paradis Beachcomber jusqu’en 2019 avant de repartir, cette fois aux Maldives au Kandima Resort pour deux ans. A son retour, il prendra la direction des cuisines du Hennessy Park Hotel puis du Tamarina Beach avant d’accepter le défi du Preskil Island Resort.
Fort de cette expérience, à la fois locale et internationale, le nouveau chef exécutif débarque au Preskil Island Resort avec comme ambition affichée de faire de bons résultats, d’avoir la satisfaction des clients, et bien sûr de la direction. Un mois après son arrivée, le menu du buffet a déjà été changé et le retour est encourageant, nous assure-t-il. La prochaine étape, ajoute-t-il, est de mettre à profit son expérience internationale pour former ses équipes aux normes modernes et aux tendances de la cuisine du moment. « Je veux qu’ils soient tous au courant des nouveaux produits, qu’ils les maîtrisent. Ils ont déjà de bonnes bases mais je veux améliorer leurs compétences. Le but c’est de proposer une cuisine qui donne envie aux clients de revenir au Preskil Island Resort parce qu’on y mange bien ».
Dans sa démarche, le chef Vishal veut privilégier les produits locaux comme le cœur de palmiste, le manioc, l’arouille violette et bien évidemment les fruits de mer et le poisson. Pour les légumes, il pourra s’approvisionner au pôle agri du Groupe Beau Vallon et assurer ainsi un circuit court alors que le lagon de Mahébourg devrait lui assurer un approvisionnement des meilleurs poissons et fruits de mer de l’île.
Le chef exécutif veut aussi créer un environnement de travail qui va inciter les jeunes à venir travailler dans l’hôtel et surtout à y rester en dépit des appels de sirène pour l’emploi à l’extérieur. Pour cela, il privilégie un bon équilibre travail-vie personnel. Nul doute que Vishal aura ainsi les moyens de mener à bien sa mission. Bonne chance chef !

Not all chefs fall into the cooking pot as children; sometimes the career choice is dictated by necessity or environment. As for excellence, it’s the fruit of ceaseless motivation. Such is the case of Vishal Marday, currently Executive Chef at Preskil Island Resort. With a wealth of international experience behind him, he has taken on this responsibility with the ambition of making this jewel in the crown of the Beau Vallon Hospitality group a benchmark for gastronomy in the southeast of the island. here is portrait of a chef with an inspiring career path.
Vishal was born in Lallmatie into a modest family. After the death of his father, he followed his mother to Bramsthan, Flacq. With his mother working early in the fields and often returning late at night, young Vishal had to prepare his own meals, though he had not developed a passion for cooking. His surroundings were filled with many individuals from the East who worked in the hotel industry, which inspired him to enroll in a cookery course at the École Hôtelière in 1997. However, Vishal’s motivation extended beyond simply finding a job; he soon recognized that the hotel business could lead to an international career, which was his secret ambition.
Vishal puts in immense effort to achieve his goals. After attending daytime classes, he worked night shifts at the Hotel Ambre. Once he obtained his diploma, he spent a year at the Silver Beach Hotel before realising his dream. His first major opportunity came at the prestigious Ritz Carlton in Dubai, where he began as a commis and eventually rose to the position of chef de partie.
Following this, he took a role as Sous Chef at the Emirates Palace/Kempinski in Abu Dhabi. Afterward, he returned to Dubai to join the Emaar Hospitality Group, where he was promoted to Head Chef after two years. Throughout his career in these hotels, Vishal primarily worked in their signature restaurants.
In 2015, for family reasons, Vishal decided to return home. He will work as Head Chef at Paradis Beachcomber until 2019 before leaving again, this time to the Maldives at Kandima Resort for two years. On his return, he will take charge of the kitchens at Hennessy Park Hotel, then Tamarina Beach, before accepting the challenge of Preskil Island Resort.
With his extensive local and international experience, the new Executive Chef has joined Preskil Island Resort with the goal of achieving excellent results, ensuring customer satisfaction, and meeting management’s expectations. Just one month after his arrival, he has already revamped the buffet menu, receiving positive feedback from guests. He plans to leverage his international experience to train his team in modern standards and current culinary trends. « I want everyone on the team to be familiar with new products and to master them, » he states. « They already have a solid foundation, but I aim to enhance their skills further. My goal is to provide a dining experience that encourages guests to return to Preskil Island Resort because of the exceptional food. »
Chef Vishal’s approach focuses on prioritising local products such as heart of palm, manioc, purple taro, and, of course, seafood and fish. He plans to source vegetables from Groupe Beau Vallon’s agricultural hub, ensuring a short supply chain, while the Mahébourg lagoon will provide some of the island’s finest fish and seafood.
Additionally, the executive chef aims to create a working environment that encourages young people to join and remain at the hotel, despite the tempting offers from other employers. To achieve this, he emphasizes the importance of a good work-life balance. There is no doubt that Vishal is well-equipped to succeed in his mission.
