Au cœur du Domaine de Grand Baie, une nouvelle adresse invite à savourer l’art de vivre mauricien en toute simplicité raffinée. Koté Jardin, fraîchement inauguré, s’impose comme une extension naturelle du restaurant principal, Le Grand Baie. Pensé comme un hommage à la nature et au métissage culinaire de l’île, ce nouvel espace marie esprit détente, atmosphère jardin et inspirations franco-mauriciennes, pour une expérience qui respire la fraîcheur.

Une ouverture gourmande

Pour son lancement, l’hôtel avait convié le vendredi 21 novembre un cercle d’amateurs de bonne cuisine à un déjeuner accords mets-vins révélant tout le talent du Chef Rakesh Munoruth et de son équipe. La partition culinaire s’ouvrait sur une caprese en finesse, avant une entrée autour du thon rouge, déclinée en ceviche au lait de coco et combava, tartare aux zestes d’agrumes et perles de framboise, et tataki saisi à la flamme. Un voyage sensoriel sublimé par un Ataraxia Sauvignon Blanc d’Afrique du Sud. Le plat principal associait un « duo de la mer » — filet de poisson de la pêche du jour et camaron flambé au rhum vieux — relevé d’accents de gingembre et de piment oiseau, escorté d’un Chablis Albert Bichot. En douceur, un fondant au chocolat cœur coulant, servi avec une glace caramel beurre salé, trouvait son parfait écho dans un M Minuty rosé de Provence.

Installé dans un vaste jardin au cœur du Domaine, Koté Jardin séduit par son atmosphère apaisée : une terrasse lumineuse, des tables posées entre les arbres, le chant des oiseaux, et comme bande-son, la musique feutrée du bar voisin. L’art de vivre y est simple, convivial et délicieusement décontracté — jusqu’à la possibilité d’une partie de pétanque avant ou après le repas.

Chaque jour, le Chef Munoruth signe une carte légère, fraîche et subtile, pensée comme une rencontre entre produits locaux et savoir-faire français. Aux côtés des grands classiques revisités — césar maison, poke bowls, burgers gourmets ou pasta généreuses — la mer occupe une place de choix, notamment à travers une trilogie de thon : tartare, ceviche et tataki. Les grillades, quant à elles, célèbrent l’authenticité : poisson entier du jour, poulet fermier grillé, camarons flambés ou langouste au beurre maître d’hôtel. Et parce que Koté Jardin revendique pleinement son ancrage mauricien, les cari, vindaye, curry poulet-crevettes et autres créations du sous-chef Fawaaz prolongent la tradition avec élégance.

In the heart of Domaine de Grand Baie, a new address invites guests to savour the Mauritian art of living with refined simplicity. Recently inaugurated, Koté Jardin appears as the natural extension of the main restaurant, Le Grand Baie. Conceived as a tribute to nature and to the island’s culinary métissage, this new venue blends a relaxed spirit, a lush garden atmosphere and Franco-Mauritian inspirations, offering an experience defined by freshness and authenticity.

An Overture of Texture and Tradition

For its launch on Friday 21 November, the hotel welcomed a circle of gastronomy lovers for a lunch with wine pairings showcasing the full talent of Chef Rakesh Munoruth and his team. The culinary journey opened with a delicate caprese, followed by an entrée celebrating red tuna in three forms: a coconut-milk and combava ceviche, a citrus-zest tartare dotted with raspberry pearls, and a flame-seared tataki. The experience was beautifully complemented by an Ataraxia Sauvignon Blanc from South Africa. The main course featured a refined “duo from the sea” — catch-of-the-day fish fillet and camaron flambéed with aged rum, lifted by hints of ginger and bird’s-eye chilli, paired with a Chablis from Albert Bichot. To end on a sweet note, a warm chocolate fondant with a molten heart, served with salted butter caramel ice cream, found its perfect match in a glass of M Minuty rosé from Provence.

Nestled within a vast garden at the heart of the Domaine, Koté Jardin charms with its serene atmosphere: a sunlit terrace, tables set among the trees, birdsong drifting through the air and, as a backdrop, the soft music from the bar. The setting is simple, convivial and delightfully relaxed — even offering the pleasure of a game of pétanque before or after the meal.

Every day, Chef Munoruth signs a menu that is light, fresh and subtle, conceived as a meeting point between local products and French savoir-faire. Alongside revisited classics — signature Caesar, poke bowls, gourmet burgers and generous pasta — the sea takes centre stage with a trilogy of tuna: tartare, ceviche and tataki. The grill selection celebrates authenticity with whole catch-of-the-day fish, flame-grilled farm chicken, flambéed camarons and lobster with maître d’hôtel butter. And because Koté Jardin embraces its Mauritian roots, dishes such as cari, vindaye, chicken-and-prawn curry, and Sous-Chef Fawaaz’s creations carry the island’s culinary heritage forward with elegance.

Open daily from 12:00 to 15:00, Koté Jardin stands as the Domaine’s new gourmet rendez-vous — a place to share genuine moments, savour food that embodies the island, and enjoy a lush, vibrant and authentic setting.
