Après avoir assuré l’intérim en 2023, Jérôme Carlier vient d’être confirmé au poste de nouveau directeur général de Heritage Awali Golf & Spa Resort. Ce passionné d’hôtellerie et de gastronomie apporte une belle expérience tant à Maurice qu’à l’international.
Diplômé du Lycée Hôtelier de Dinard, où il a engrangé plusieurs formations tant dans le service qu’en cuisine, il y décrochera également une spécialisation en sommellerie. C’est d’ailleurs dans cette branche qu’il va lancer carrière dans de nombreux établissements en France, au Liban mais aussi au Royaume-Uni. En 2009, il débarque à Maurice au Constance Belle Mare avant de se diriger la même année aux Seychelles au Constance Halaveli. Jérôme revient à Maurice en 2011 comme chef sommelier au Constance Prince Maurice, un poste qu’il occupera jusqu’en 2019 quand il retournera au Seychelles au Constance Lemuria.
En janvier 2022, Jérôme dépose ses bagages au Domaine de Bel Ombre comme directeur général du Château. Très vite, il est appelé à diriger le service sommellerie de Heritage Resorts et à assurer l’intérim au poste de directeur général de Heritage Awali Golf & Spa Resort. Depuis son arrivée, Jérôme n’a pas cessé de faire évoluer l’offre gastronomique de Heritage Awali avec la venue de chefs étoilés au guide Michelin. Jérôme a toujours fait preuve d’une orientation centrée sur le client et d’une passion pour l’industrie hôtelière. Il s’engage aujourd’hui à maintenir le niveau d’excellence d’Heritage Awali.

Jérôme Carlier has just been confirmed as General Manager of Heritage Awali Golf & Spa Resort, after serving as interim General Manager in 2023. This hotel and gastronomy enthusiast brings a wealth of experience both in Mauritius and internationally.
A graduate of the Lycée Hôtelier de Dinard, where he took several courses in both service and cuisine, he also specialised in wine knowledge. It was in this field that he launched his career in several establishments in France, Lebanon and the UK. In 2009, he arrived in Mauritius at the Constance Belle Mare before heading to the Seychelles the same year at the Constance Halaveli. Jérôme returned to Mauritius in 2011 as head sommelier at Constance Prince Maurice, a position he will hold until 2019 when he returns to the Seychelles at Constance Lemuria.
In January 2022, Jérôme moved to Domaine de Bel Ombre as General Manager of the Château. He was soon called upon to head up the sommelier department at Heritage Resorts and to act as interim general manager of Heritage Awali Golf & Spa Resort. Since his arrival, Jérôme has continued to develop Heritage Awali’s gastronomic offering with the arrival of Michelin-starred chefs. Jérôme has always demonstrated a customer focus and a passion for the hospitality industry. He is now committed to maintaining Heritage Awali’s level of excellence.
