Le moment de vérité est arrivé pour nos représentants à la prestigieuse Finale africaine de la Coupe du Monde de la Pâtisserie, un évènement qui réunit les meilleurs chefs pâtissiers du continent africain, tous les deux ans. Sous le haut patronage du roi du Maroc, Mohammed, cet évènement d’envergure se déroule à Marrakech du 12 au 13 septembre. Organisée sous l’égide de la Coupe du Monde de la Pâtisserie Présidée par le célèbre Chef Pierre Hermé, cette finale continentale est une opportunité pour les équipes africaines de démontrer leur créativité, leur maîtrise technique et leur capacité à repousser les limites de la pâtisserie moderne.
Pour ce rendez-vous incontournable, l’équipe mauricienne en lice rivalisera d’ingéniosité, de précision, d’esthétique et de goût pour créer des pièces artistiques en sucre et des desserts en chocolat aux visuels époustouflants. Pendant 12 heures vendredi, les équipes devront produire 3 entremets glacés à base de fruit, 3 pièces pâtissières – Paris Brest revisité, 8 desserts de restaurant au chocolat, 1 pièce artistique montée en sucre et 1 pièce artistique montée en chocolat. L’équipe mauricienne est composée du Chef Pravesh Gookoolah de Beachcomber Canonnier, du Chef Iven Chithray de Constance Prince Maurice, du Chef Shivam Marooday de Beachcomber Shandrani, la Présidente / Coach la Cheffe Sandy Scioli et le Managing Director, le Dr Jérôme Fabre, tous deux de l`Institut Escoffier.

Ce concours mobilise plus de 8 pays, qui participent aux processus de sélections continentales afin de décrocher le Graal lors de la Grande Finale de la Coupe du Monde de la Pâtisserie à Sirha à Lyon prévu pour janvier 2025. Selon le Dr Jérôme Fabre, « cette compétition est le meilleur véhicule pour valoriser ce prestigieux métier de chef pâtissier, les produits du terroir, développer des vocations chez les jeunes, former les professionnels de l`industrie et renforcer la visibilité de la destination sur la scène internationale ».
Pour rappel, lors de sa première participation, l`Ile Maurice a décroché le titre de vice-championne d`Afrique derrière le Maroc, pays organisateur et obtenu une honorable quinzième place lors de la finale mondiale en 2023 à Lyon.
African Final of the World Pastry Cup: the moment of truth for Mauritius
The big day has arrived for our representatives at the prestigious African Final of the World Pastry Cup. This event brings together the best pastry chefs on the African continent every two years. Under the patronage of King Mohammed of Morocco, this major event takes place in Marrakech from 12 to 13 September. Organised under the aegis of the World Pastry Cup, presided over by the famous chef Pierre Hermé, this continental final is an opportunity for African teams to demonstrate their creativity, technical mastery and ability to push back the boundaries of modern pastry-making.
For this not-to-be-missed event, the Mauritian team in the running will compete in ingenuity, precision, aesthetics and taste to create artistic sugar pieces and chocolate desserts with breathtaking visuals. For 12 hours, the teams must produce 3 fruit-based iced entremets, 3 pastry pieces – Paris Brest revisited, 8 chocolate restaurant desserts, 1 sugar artistic piece and 1 chocolate artistic piece. The Mauritian team is made up of Chef Pravesh Gookoolah from Beachcomber Canonnier, Chef Iven Chithray from Constance Prince Maurice, Chef Shivam Marooday from Beachcomber Shandrani, President / Coach Chef Sandy Scioli and Managing Director Dr Jérôme Fabre, both from Institut Escoffier.
More than 8 countries are involved in the competition, participating in continental selection processes to win the Grail at the Grand Final of the World Pastry Cup at Sirha in Lyon in January 2025. According to Dr Jérôme Fabre, ‘this competition is the best vehicle for promoting the prestigious profession of pastry chef and local products, developing vocations among young people, training professionals in the industry and raising the profile of our destination on the international stage’.
Mauritius’ second participation in the competition is seen as an opportunity to shine on a global scale and to stimulate interest in pastry-making within the local community. Jérôme Fabre, Director of the Institut Escoffier, underlines the positive impact of the last participation in 2022 in terms of promoting local talent and Mauritian products. The winners in each category made the country proud by finishing in the top 15 of the final. This time, Shivam Marouday and Pravesh Gokhoola (who were in Lyon for the first time in 2023), and Iven Chitray are aiming to outdo themselves by preparing hard to represent Mauritius with dignity at the African phase, where they will have to compete with the continent’s best talent.
For its first participation, Mauritius won the title of African runner-up behind Morocco, the organising country. We then achieved an honourable fifteenth place at the world finals in 2023 in Lyon.
