Chef Noël Serge Chelvan : l’engagement soutenu pour la gastronomie mauricienne

La cuisine mauricienne, extrêmement riche en saveurs et en histoires, s’impose avec une profondeur bien plus marquée qu’on ne l’imagine. Imprégnée de traditions pluriculturelles et de savoir-faire divers, elle est le reflet d’une île aux multiples influences. Le Chef Noël Serge Chelvan, fort de plus de 30 ans d’expérience dans l’hôtellerie, a su non seulement maîtriser cet art derrière les fourneaux, mais aussi le coucher sur papier. Après un premier ouvrage – Histoire et Cuisine Traditionnelle 1930-1970 – paru en 2023, il a récidivé cette année avec « Vokabiler kiliner kreol ek lakwizinn klasik morisien ». Ces livres, à la fois patrimoniaux et profondément patriotiques, constituent une véritable richesse pour la gastronomie mauricienne et méritent d’être explorés.

Le voyage culinaire du talentueux Chef commence en 1979 au Méridien Paradis (aujourd’hui Beachcomber Paradis). Noël Chelvan travaillera par la suite dans de nombreux établissements hôteliers d’ici et d’ailleurs avant de prendre une retraite anticipée en 2012. Il n’abandonne pas son tablier pour autant car il se consacre dès lors à la formation de jeunes chefs dans des écoles hôtelières. Pendant ces années, il transmet non seulement son savoir-faire mais aussi une vision élargie de la cuisine, nourrie par ses participations à de nombreuses compétitions nationales et internationales. Parallèlement, le Chef rédige des notes sur l’héritage culinaire de l’île afin d’enrichir la mémoire collective, un effort qui a abouti à deux remarquables ouvrages de référence.

En 2023, quand il arrête l’enseignement, il publie « Histoire et Cuisine Traditionnelle 1930-1970 ». C’est une exploration historique des plats régionaux de l’ouest mauricien, couvrant des localités comme Chamarel, Flic-en-Flac, Tamarin et Bambous. Cet ouvrage est une initiative personnelle publié à compte d’honneur et a bénéficié du soutien symbolique de la Fondation Morne Heritage. Primé par l’Académie de l’Art Culinaire du Monde Créole, ce livre offre une immersion dans une époque où la cuisine était une affaire de patience et de savoir-faire.

Les recettes, à l’image du bouillon rosse la rivière illustrent à merveille ce mélange unique d’astuce et de simplicité. En effet, ce plat cuisiné avec un caillou provenant de la rivière pour y ajouter une touche salée témoigne d’une époque où la débrouillardise régnait en maître. Au-delà des techniques culinaires, cet ouvrage est un hommage aux anciens et à cette tradition culinaire qui ne se transmettait qu’oralement de génération en génération. Selon le Cardinal Maurice E. Piat, qui a préfacé l’ouvrage, ce livre est « un témoignage inédit d’un art de vivre élaboré avec patience et débrouillardise. »

 

Le deuxième livre du Chef, publié début 2024, témoigne de son désir d’intégrer davantage la langue créole dans la formation culinaire. « Vokabiler kiliner kreol ek lakwizinn klasik morisien » est né de l’observation des difficultés rencontrées par les élèves en cuisine lorsqu’ils sont confrontés à des cours dispensés uniquement en français. Ce manuel trilingue (créole, français, anglais) simplifie les termes et les techniques culinaires pour les rendre plus accessibles aux jeunes chefs, notamment ceux des niveaux NC2, NC3 et NC4.

Ce livre, qui se veut à la fois pratique et patriotique, fusionne tout le savoir accumulé par le Chef dans les cuisines hôtelières pour être mis au service des étudiants, en leur offrant un outil pédagogique adapté à leur réalité linguistique. Grâce à l’appui du Dr Jimmy Harmon et d’une équipe de pédagogues, ce manuel permet aux futurs chefs de se sentir bien plus à l’aise et de mieux assimiler les techniques culinaires tout en valorisant leur langue maternelle. Pour l’auteur, c’est un geste de transmission indispensable à l’évolution et à la reconnaissance de la cuisine mauricienne. Cela paraît tout bête, mais il fallait y penser, comme dirait l’autre !

 

Les deux ouvrages, encensés pour leur valeur pédagogique et patrimoniale, sont actuellement disponibles aux Éditions de l’Océan Indien. Soutenu par sa famille, qui a joué un rôle central dans la réalisation de ces projets, le professionnel est déjà plongé dans l’écriture de son troisième ouvrage intitulé « Répertoire-Mémoire ». Ce livre, qui s’inscrit dans la continuité de son travail, aspire à capturer l’essence de la cuisine mauricienne tout en conservant une approche historique et culturelle.

 

 

Au-delà de son travail d’auteur, le Chef nourrit une ambition majeure : l’élaboration d’un plat national pour Maurice. Il croit fermement qu’un tel plat pourrait offrir à la cuisine mauricienne non seulement une identité stable mais aussi une reconnaissance sur la scène internationale. « Un pays existe et vit à travers son histoire culinaire », affirme-t-il, « et il est crucial d’avoir une référence nationale pour notre gastronomie. »

 

 

Noël Serge Chelvan : One chef, two books for a sustained commitment to Mauritian gastronomy

To replace the iconic Chef Kallooa at the Ambre Hotel, another equally talented chef was needed. This has now been achieved with the arrival of chef Moothen Moorooghen, aka Kelley. The Flacq-born chef, who started as a steward at the Saint Géran, now returns to the Sunlife group with a wealth of experience.

Mauritian cuisine, particularly rich in flavour and history, is far more profound than one might imagine. Imbued with multicultural traditions and diverse skills, it is the reflection of an island with manifold influences. Chef Noël Serge Chelvan, with over 30 years’ experience in the hotel industry, has not only mastered this art behind the stove but has also put it down on paper. After his first book – Histoire et Cuisine Traditionnelle 1930-1970 – published in 2023, he is back this year with ‘Vokabiler kiliner kreol ek lakwizinn klasik morisien’. These books, which are both heritage-based and deeply patriotic, are a real treasure trove for Mauritian gastronomy and deserve to be explored.

 

The talented Chef’s culinary journey began in 1979 at Le Méridien Paradis (now Beachcomber Paradis). Noël Chelvan went on to work in numerous hotels in Mauritius and abroad before taking early retirement in 2012. But he did not give up his apron for all that, as from that time onwards, he devoted himself to training young chefs in hotel schools. During these years, he passed on not only his know-how but also a broader vision of cuisine, nurtured by his participation in numerous national and international competitions. At the same time, the Chef jotted down notes on the island’s culinary heritage to enrich the collective memory, an effort that resulted in two notable reference works.

 

In 2023, when he stopped teaching, he published ‘Histoire et Cuisine Traditionnelle 1930-1970’, a historical exploration of the regional dishes of the Western part of the island covering villages like Chamarel, Flic-en-Flac, Tamarin and Bambous. The book which is a personal, self-financed initiative has received symbolic support from the Morne Heritage Foundation. Winner of an award from the Académie de l’Art Culinaire du Monde Créole, the manual takes us back to a time when cooking was a matter of patience and know-how.

The recipes, such as the rosse la rivière broth, are a perfect illustration of this unique blend of cleverness and simplicity. Indeed, this dish, cooked with a pebble from the river to add a salty touch, bears witness to a time when resourcefulness reigned supreme. Beyond the culinary techniques, this book is a tribute to the elders and to that culinary tradition which was only passed down orally from generation to generation. According to Cardinal Maurice E. Piat, who wrote the preface to the book, it is “an unprecedented testimony to an art of living developed with patience and resourcefulness”.

 

The Chef’s second book, published in early 2024, reflects his desire to integrate the Creole language more fully into culinary training. ‘Vokabiler kiliner kreol ek lakwizinn klasik morisien’ was born out of his observation of the difficulties encountered by cookery students when faced with courses taught solely in French. This trilingual manual (Creole, French, English) simplifies culinary terms and techniques to make them more accessible to young chefs, particularly those at NC2, NC3 and NC4 levels.

This book, which is both practical and patriotic, brings together all the knowledge accumulated by the Chef in the hotel kitchens, for the benefit of students, by offering them a teaching tool adapted to their linguistic reality. Thanks to the support of Dr Jimmy Harmon and a team of educationalists, this manual enables future chefs to feel much more at ease and better assimilate culinary techniques while enhancing their mother tongue. For the author, it is an essential act of transmission for the evolution and recognition of Mauritian cuisine. Something which may sound simple, but that was clever thinking, as we say!

The two books, praised for their educational and heritage value, are currently available at Éditions de l’Océan Indien. With the support of his family, who played a central role in bringing these projects to fruition, the professional is already immersed in writing his third manual entitled ‘Répertoire-Mémoire’. This book, which is a continuation of his work, aims to capture the essence of Mauritian cuisine while maintaining a historical and cultural approach.

 

Beyond his work as an author, the Chef has a major ambition: the elaboration of a national dish for Mauritius. He firmly believes that such a dish could give Mauritian cuisine not only a stable identity but also recognition on the international stage. “A country exists and lives through its culinary history”, he says, “and it is crucial to have a national reference for our gastronomy.”
