Depuis dix-sept ans, Navissen Payannandee cisèle son art avec la précision d’un orfèvre et la constance d’un artisan passionné. Originaire de Flacq, le chef exécutif du Constance Sakoa de Trou aux Biches puise ses premières émotions culinaires dans un héritage familial profondément ancré : un oncle chef au Constance Belle Mare Plage, un autre déjà derrière les fourneaux, et une grand-mère qui façonnait et vendait ses gâteaux maison avec un sens inné du goût et du partage.
Le déclic d’une vocation
La révélation survient au collège Basdeo Bissoondoyal de Flacq, lors d’un cours de Food and Nutrition. Une pizza parfaitement exécutée, au point de surprendre sa propre enseignante, scelle un destin. Dès les vacances suivantes, il franchit les portes du Constance Prince Maurice pour un stage en cuisine. L’expérience agit comme un point de non-retour : il quitte l’école, intègre l’Académie Constance et forge ses bases dans l’exigence et la rigueur.
Deux années au Prince Maurice, puis la crise économique de 2008 le pousse à diversifier ses expériences : cuisine chinoise dans un restaurant de Flacq, retour triomphal à Constance Belle Mare Plage pour six années d’apprentissage intense, avant l’appel de l’international. À Dubaï, il officie au Shangri-La, dans un restaurant italien doublement étoilé Michelin. Deux années marquées par l’excellence et la précision du geste.
Retour au pays et nouveaux horizons
De retour à Maurice, il alterne entre projets d’envergure et postes stratégiques : ouverture du Sea Resort, lancement du Chalet de Chamarel, poste de sous-chef au Lux Grand Gaube, passage à The Residence. En 2023, il revient à la maison : Constance, cette fois au Sakoa, où il déploie depuis un an et demi une cuisine méditerranéenne élégamment ponctuée de touches mauriciennes.
Les mercredis, un buffet 100 % local célèbre la richesse du terroir : bananes, chouchous, épices… Aujourd’hui, il défend le carré de cerf comme produit signature, digne de rivaliser avec les viandes les plus nobles. Sa vision ? Une alchimie subtile entre authenticité et créativité, capable de séduire les palais les plus avertis à l’international.
Un plat signature poétique
Son plat emblématique, l’ourite safrané, témoigne de cette approche : pomme d’été sautée à l’ail, mousse de pomme de terre aérienne, dressage d’une élégance graphique. Chaque assiette raconte une histoire, parfois imaginée au détour d’un rêve, qu’il esquisse sur papier avant de la faire naître en cuisine.
Chef généreux, il transmet sans réserve son savoir – recettes, techniques, gestion – à son équipe de quatorze personnes. Aux jeunes qui rêvent de ce métier, il rappelle que la discipline est la clé : écouter, accepter la critique, persévérer.

For seventeen years, Navissen Payannandee has honed his craft with the precision of a goldsmith and the dedication of a true artisan. Born in Flacq, the executive chef at Constance Sakoa in Trou aux Biches has early culinary memories rooted in a rich family heritage: an uncle working as a chef at Cepalmard, another in the kitchen, and a grandmother baking and selling her homemade cakes, all with an instinctive sense of flavour and generosity.
The spark of a calling
The turning point came at Basdeo Bissoondoyal College in Flacq during a Food and Nutrition class. A flawlessly executed pizza, so perfect it surprised his teacher, marked the start of his journey. That same year, he stepped into the kitchens of Constance Prince Maurice for a holiday internship. The experience was decisive — he left school, joined the Constance Academy, and built his foundations on discipline and excellence.
After two years at Prince Maurice, the 2008 financial crisis prompted him to diversify: Chinese cuisine in a Flacq restaurant, then a triumphant return to Constance Belle Mare Plage for six intense years, before answering the call of the international stage. In Dubai, he worked at the Shangri-La in a Michelin two-star Italian restaurant, mastering finesse and technical precision over two transformative years.
Returning home, embracing new projects
Back in Mauritius, Navissen alternated between high-profile projects and strategic positions: opening the Sea Resort, launching the Chalet de Chamarel, serving as sous-chef at Lux Grand Gaube, and a stint at The Residence. In 2023, he returned “home” to Constance, this time at Sakoa, where for the past year and a half he has been crafting a Mediterranean-inspired cuisine delicately infused with Mauritian flair.
Every Wednesday, a 100% local buffet celebrates the richness of the island’s produce: bananas, chayote, fragrant spices… Always seeking innovation, Navissen champions venison as a signature ingredient worthy of standing alongside the world’s finest meats. His vision? A delicate balance between authenticity and creativity, capable of captivating the most discerning palates internationally.
A poetic signature dish
His emblematic dish, saffron-infused octopus, embodies this approach: sautéed summer apple with garlic, a silky potato mousse, and artful plating that borders on the poetic. Each plate tells a story, sometimes conceived in a dream, sketched on paper, and then brought to life in the kitchen.
