Derrière ce succès se trouvent Jérôme Armoogum, propriétaire passionné, et le jeune chef norvégien Andreas Stewart, qui insufflent ensemble une nouvelle énergie à la cuisine italienne sur l’île.

Une expérience pensée dans les moindres détails

Lorsque Botteghita a remporté The Perfect Experience, la satisfaction s’est mêlée à la surprise. Face à plusieurs grandes tables mauriciennes, le restaurant a su séduire grâce à une approche cohérente où tout compte : la cuisine, le service, l’ambiance et même les accords mets-vins.

Pour Jérôme Armoogum, l’expérience client reste essentielle. Dans un décor sobre mêlant bois et pierre, l’équipe cherche avant tout à créer un moment chaleureux et immersif. C’est dans ce contexte qu’arrive Andreas Stewart. Originaire de Norvège, le jeune chef de 28 ans est autodidacte et passionné de cuisine italienne. Arrivé sans réelle expérience derrière les fourneaux, il apprend rapidement avant de devenir chef en juin 2024.

Sa philosophie repose sur la simplicité et la précision. Pour lui, la qualité des produits reste primordiale. Parmi ses créations emblématiques figure un tortellini au foie gras servi dans un bouillon de pintade, hommage raffiné au traditionnel “tortellini in brodo”.

Une identité italienne enracinée à Maurice

Même profondément italienne, la cuisine de Botteghita reste connectée au terroir mauricien. Andreas parcourt régulièrement les marchés de Goodlands, Flacq et Port-Louis pour sélectionner légumes, poissons et produits de saison.

Quelques touches locales s’invitent aussi à la carte, comme une pizza inspirée des saveurs mauriciennes avec poulet, piment et poivrons.

Mais la véritable force du restaurant réside dans son équipe. Jeune et dynamique, elle fonctionne dans un esprit de collaboration permanente, entre dégustations, brainstorming et échanges quotidiens. Cette cohésion a largement contribué au succès de The Perfect Experience.

Porté par cette distinction, Botteghita regarde déjà vers l’avenir avec plusieurs projets : un second établissement dans l’Ouest, un rooftop à Grand Baie et une offre plus axée sur une cuisine légère, healthy et adaptée à différents régimes alimentaires.

In Grand Baie, Botteghita Ristorante & Bar has quickly established itself as one of Mauritius’s most sought-after dining destinations. The restaurant’s victory in the culinary competition The Perfect Experience, organised by E.C. Oxenham with the support of ABC Banking, South African Airways and Phenicie, confirms this rise to prominence.

Behind this success are Jérôme Armoogum, a passionate owner, and young Norwegian chef Andreas Stewart, who together are breathing new life into Italian cuisine on the island.

An experience crafted down to the smallest detail

When Botteghita won The Perfect Experience, satisfaction mingled with surprise. Competing against several leading Mauritian restaurants, the establishment impressed the judges with a coherent concept where every detail mattered: the cuisine, the service, the atmosphere and even the food-and-wine pairings.

For Jérôme Armoogum, the customer experience remains paramount. In a refined setting combining wood and stone, the team strives above all to create a warm and immersive moment for guests. This attention to detail explains why the restaurant has rapidly built a loyal following among both local diners and visitors.

Between Italian tradition and contemporary creativity

Following the pandemic, Jérôme took over the restaurant with the aim of preserving its Italian identity while modernising it. With the support of the original owners, Giacomo and Patricia, as well as Italian consultant Alessandro Morino and chef Mario Piero, he reinforced the fundamentals: thin Roman-style pizzas, fresh pasta and carefully selected ingredients.

It was within this environment that Andreas Stewart arrived. Originally from Norway, the 28-year-old chef is self-taught and deeply passionate about Italian cuisine. Arriving with limited professional kitchen experience, he quickly progressed before becoming head chef in June 2024.

His philosophy is rooted in simplicity and precision. For him, ingredient quality remains essential. Among his signature creations is a foie gras tortellini served in a guinea fowl broth, a refined tribute to the traditional tortellini in brodo.

An Italian identity rooted in Mauritius

Although deeply Italian, Botteghita’s cuisine remains strongly connected to the Mauritian terroir. Andreas regularly visits the markets of Goodlands, Flacq and Port Louis to source vegetables, fish and seasonal produce.

Local influences also appear on the menu, including a pizza inspired by Mauritian flavours featuring chicken, chilli and peppers.

But the restaurant’s real strength lies in its team. Young and dynamic, the staff work in a spirit of constant collaboration through tastings, brainstorming sessions and daily exchanges. This cohesion played a major role in the success of The Perfect Experience.

Buoyed by this accolade, Botteghita is already looking ahead with several projects in development: a second outlet in the west of Mauritius, a rooftop venue in Grand Baie and a menu increasingly focused on lighter, healthier cuisine adapted to different dietary preferences.

An ambitious evolution that remains faithful to what defines Botteghita today: a vibrant, generous and resolutely contemporary slice of Italy in the heart of Mauritius.
