Trente-six jeunes aspirants chefs de l’École Hôtelière Sir Gaëtan Duval bénéficient actuellement d’une formation exceptionnelle, inspirée des traditions et techniques culinaires du légendaire Paul Bocuse. Soutenu par Absa Maurice, ce programme a été développé par Bocuse d’Or Mauritius, en collaboration avec l’École Hôtelière. Le programme, qui a débuté en octobre, durera huit semaines et sera animé par des chefs de renom, offrant aux étudiants de deuxième et troisième années une expérience immersive unique.
Durant huit semaines, ce programme alliera théorie et pratique, combinant des techniques culinaires classiques aux innovations modernes. Encadrés par des chefs expérimentés tels que Nizam Peeroo, Kritesh Halkory, Emmanuel Fortuno, Patrick Travedy, Harrish Mungar, et Kevin Jumangalsing, les participants auront l’opportunité d’affiner leur savoir-faire et d’enrichir leur créativité culinaire.
Emmanuel Fortuno, médaillé d’argent du Bocuse d’Or Afrique 2024, n’a pas caché son enthousiasme à l’idée de transmettre son expérience aux étudiants : « J’ai hâte de partager mes connaissances et de montrer aux étudiants l’importance de valoriser les produits pour créer une cuisine raffinée. C’est un honneur de transmettre cette passion et de partager la richesse de notre métier ».
Pour les jeunes talents, cette formation est une chance unique de s’initier aux grands principes culinaires qui ont la renommée de Paul Bocuse, surnommé le « pape de la gastronomie française ». Kunal Jankee est de ceux-là. « Je m’attends à découvrir de nouvelles techniques, à élaborer des recettes originales, et à tout simplement apprendre en côtoyant des professionnels connus et reconnus. Cette formation est une chance inouïe pour ceux d’entre nous qui rêvent de faire carrière dans ce domaine », déclare-t-il. Et pour Haseenah Boodhoo, une autre étudiante, d’ajouter : « Avec cette formation, je souhaite approfondir mes compétences culinaires et enrichir mes connaissances »

Bocuse d’Or Mauritius adds a professional touch to the training of aspiring chefs at the Sir Gaëtan Duval Hotel School
Thirty-six young aspiring chefs from the Sir Gaëtan Duval Hotel School are currently benefiting from an exceptional training programme inspired by the culinary traditions and techniques of the legendary Paul Bocuse. Supported by Absa Mauritius, Bocuse d’Or Mauritius developed the programme in collaboration with the École Hôtelière. The programme, which began in October, will last eight weeks and will be led by renowned chefs, offering second and third-year students a unique immersive experience.
The eight-week programme will combine theory and practice, combining classic culinary techniques with modern innovations. Under the guidance of experienced chefs such as Nizam Peeroo, Kritesh Halkory, Emmanuel Fortuno, Patrick Travedy, Harrish Mungar, and Kevin Jumangalsing, participants will have the opportunity to hone their skills and enrich their culinary creativity.
Emmanuel Fortuno, silver medallist at the Bocuse d’Or Africa 2024, made no secret of his enthusiasm at the idea of passing on his experience to the students: ‘I can’t wait to share my knowledge and show the students the importance of making the most of products to create a refined cuisine. It’s an honour to pass on this passion and share the richness of our profession’.
For talented young people, this training is a unique opportunity to learn about the great culinary principles for which Paul Bocuse, nicknamed the ‘Pope of French Gastronomy’, is renowned. Kunal Jankee is one of them. ‘I’m looking forward to discovering new techniques, developing original recipes and simply learning from well-known and recognised professionals. This course is an incredible opportunity for those of us who dream of a career in this field,’ he says. And Haseenah Boodhoo, another student, adds: ‘With this course, I want to deepen my culinary skills and enrich my knowledge’.
