Au B-View de Legend Hill : Une immersion dans l’univers libre et créatif de Blankbottle Winery

À B-View, le vin n’était pas seulement un accompagnement : il était le fil conducteur d’un voyage sensoriel imaginé autour de l’univers singulier de BLANKbottle Winery et de son fondateur, Pieter Walser. Le temps d’un dîner en accords mets-vins orchestré avec l’équipe de 20/Vin, les convives ont découvert une approche libre, instinctive et profondément narrative du vin sud-africain, sublimée par la cuisine généreuse et inventive du chef Glenn Viel.

Face à l’océan, dans l’atmosphère élégante et contemporaine de Legend Hill, la soirée avait quelque chose d’intime et de privilégié. Plus qu’une dégustation, il s’agissait d’une immersion dans l’univers d’un vigneron qui refuse depuis plus de vingt ans les conventions du monde viticole. Chez Blankbottle, les étiquettes ne révèlent presque rien : ni cépage, ni classification rassurante. Pieter Walser préfère laisser parler l’émotion, l’histoire et le goût.

Une philosophie née au début des années 2000 lorsqu’une cliente lui avait demandé « n’importe quel vin sauf du Shiraz ». Il lui servit pourtant un Shiraz à l’aveugle… qu’elle adora. Depuis, le vigneron sud-africain construit ses cuvées comme des récits, loin des codes traditionnels.

Des accords mets-vins pensés comme une narration gastronomique

Cette liberté s’est retrouvée dès les premières bouchées du menu imaginé pour la soirée. En amuse-bouche, un tartare de crevettes accompagné d’un bouillon végétal et d’une tête croustillante à croquer ouvrait le bal avec finesse et intensité iodée. Le Jan Niemand Riesling 2022 venait apporter tension et fraîcheur, jouant sur des notes ciselées qui prolongeaient la délicatesse du plat.

Le deuxième service, autour des bredes du jardin et d’une émulsion de riz, révélait une facette plus végétale et texturée du dîner. L’Epileptic Inspiration Semillon 2023, au nom aussi intrigant que personnel, faisait écho au parcours de Pieter Walser, qui a transformé certaines épreuves de vie en véritables créations artistiques et œnologiques. Les vins Blankbottle portent souvent des noms énigmatiques, poétiques ou autobiographiques, conçus comme des fragments d’histoires à interpréter.

Puis vint le plat intitulé Vieille Rouge : un poisson délicatement travaillé, accompagné d’un condiment au foie gras et d’un chou pressé. L’accord avec le Master of None 2025 surprenait par son équilibre entre richesse et précision. Chez Blankbottle, rien n’est figé : certaines cuvées ne seront jamais reproduites, d’autres évoluent au fil des millésimes et des rencontres avec les terroirs du Western Cape.

Pieter Walser ne possède d’ailleurs pas de vignoble attitré ; il parcourt l’Afrique du Sud à la recherche de parcelles singulières et de producteurs passionnés, assemblant ensuite ses vins comme un artiste compose une œuvre.

Une soirée où le vin racontait une histoire

Le wagyu servi façon bourguignonne, nappé d’un jus profond et intense, constituait sans doute l’un des sommets gastronomiques de la soirée. Le Pierre Le Cois Bordeaux Blend 2022 lui répondait avec ampleur et structure, dans un dialogue parfaitement maîtrisé entre puissance et élégance. On retrouvait ici ce qui fait la réputation grandissante de Blankbottle : des vins audacieux mais précis, capables de séduire autant les amateurs curieux que les palais les plus avertis.

Enfin, le dessert autour d’un ananas poché aux épices et d’un sorbet gingembre apportait une conclusion lumineuse et tropicale, relevée par une liqueur vanille New Grove aux accents mauriciens.

Au-delà des accords, cette soirée au B-View aura surtout permis de découvrir la personnalité singulière de Pieter Walser. Loin des discours formatés, le vigneron sud-africain revendique une approche instinctive du vin, guidée par l’émotion, les rencontres et la curiosité. Chaque bouteille devient ainsi une histoire à raconter, un souvenir de lieu, une expérience à partager.

Dans un paysage viticole souvent dominé par les classifications et les attentes du marché, Blankbottle revendique une forme de liberté rare. Et c’est sans doute cette authenticité qui a donné à ce dîner toute sa résonance : celle d’une rencontre entre gastronomie, création et émotion.

At B-View, wine was not merely an accompaniment: it became the guiding thread of a sensory journey imagined around the singular universe of BLANKbottle Winery and its founder, Pieter Walser. During a food and wine pairing dinner organised with the 20/Vin team, guests discovered a free, instinctive and deeply narrative approach to South African wine, elevated by the generous and inventive cuisine of chef Glenn Viel.

Facing the ocean, within the elegant and contemporary atmosphere of Legend Hill, the evening felt intimate and privileged. More than a tasting, it was an immersion into the world of a winemaker who, for over twenty years, has deliberately rejected the conventions of the wine industry. At Blankbottle, labels reveal almost nothing: neither grape varieties nor reassuring classifications. Pieter Walser prefers to let emotion, storytelling and taste speak for themselves.

 

This philosophy was born in the early 2000s, when a customer once asked him for “any wine except Shiraz”. He served her a blind Shiraz anyway — and she loved it. Since then, the South African winemaker has crafted his cuvées like stories, far removed from traditional codes.

Food and wine pairings imagined as a gastronomic narrative

 

This spirit of freedom could already be sensed in the opening bites of the menu created for the evening. As an appetiser, a shrimp tartare accompanied by a vegetable broth and a crunchy edible head opened the experience with finesse and iodised intensity. The Jan Brexit Riesling 2022 brought tension and freshness, with chiselled notes extending the delicacy of the dish.

The second course, built around garden greens and a rice emulsion, revealed a more vegetal and textured dimension to the dinner. The Epileptic Inspiration Semillon 2023 — a name as intriguing as it is personal — echoed the journey of Pieter Walser, who transformed certain life trials into genuine artistic and oenological creations. Blankbottle wines often bear enigmatic, poetic or autobiographical names, conceived as fragments of stories open to interpretation.

Then came the dish entitled Vieille Rouge: delicately prepared fish accompanied by a foie gras condiment and pressed cabbage. The pairing with Master of None 2025 proved remarkable for its balance between richness and precision. At Blankbottle, nothing is fixed: some cuvées are never reproduced, while others evolve according to vintages, encounters and terroirs across the Western Cape.

Pieter Walser owns no specific vineyard. Instead, he travels across South Africa in search of unique plots and passionate growers, blending his wines the way an artist composes a work.

 

 

An evening where wine became storytelling

 

The wagyu beef served in a Burgundian style, enhanced by a deep and intense jus, was undoubtedly one of the gastronomic highlights of the evening. The Pierre Le Cois Bordeaux Blend 2022 responded with breadth and structure, in a perfectly controlled dialogue between power and elegance. Here, one could fully grasp what has shaped Blankbottle’s growing reputation: wines that are bold yet precise, capable of seducing both curious amateurs and the most discerning palates.

Finally, dessert — centred around pineapple poached in spices and a ginger sorbet — brought a luminous, tropical conclusion to the evening, elevated by a vanilla-infused New Grove liqueur with unmistakably Mauritian accents.

Beyond the pairings themselves, the evening at B-View above all revealed the singular personality of Pieter Walser. Far removed from formatted discourse, the South African winemaker embraces an instinctive approach to wine, guided by emotion, encounters and curiosity. Each bottle thus becomes a story to tell, a memory of place, an experience to share.

In a wine landscape often dominated by classifications and market expectations, Blankbottle embodies a rare form of freedom. And it was undoubtedly this authenticity that gave the dinner its resonance: the meeting point between gastronomy, creativity and emotion.
