Chef Exécutif de La Pirogue et depuis 2020 celui du Long Beach, finaliste du concours Bocuse d’Or Mauritius 2022, Amalen Vyapooree est reconnu pour l’excellence de son métier. Il a aussi d’autres cordes à son arc, notamment celui d’un administrateur minutieux, ce qui lui vaut aujourd’hui d’être promu au poste d’Executive Assistant Manager au Long Beach hôtel, le 5* étoiles du groupe Sunlife situé sur la côte est de l’île.
Amalen Vyapooree, 40 ans, voue une passion sans bornes pour la cuisine depuis son plus jeune âge. Élève de l’école hôtelière, c’est en 2002, au Royal Palm qu’il commence sa carrière. Pendant huit ans et demi, il travaille aux côtés du Chef Michel de Matteis, son père spirituel, qui le pousse à avoir une expérience à l’étranger. L’occasion se présente à lui avec une offre au Qatar pour travailler avec Gordon Ramsay détenteur de deux restaurants, le Gordon Ramsay (gastronomique) et l’Opal, au St Régis de Doha. Sa progression est fulgurante et au bout de deux ans, il devient second en cuisine.
Ambitieux, il décroche en 2015 le titre de meilleur restaurant du Moyen-Orient pour le Gordon Ramsay. Puis il prend un nouveau défi comme consultant pour un groupe japonais à Dubaï. Il assurera aussi en parallèle un service conseil au niveau des opérations F&B pour le Yu Lounge à Plaisance avant de poser ses valises à La Pirogue en 2017.
Depuis son arrivée au sein de Sunlife, Amalen n’a eu de cesse de réinventer l’expérience gastronomique dans les restaurants des hôtels où il a posé ses valises. Parallèlement il a décroché en février 2023 un MBA en « Management & Marketing de Luxe » de L’ESG Paris.

Executive Chef of La Pirogue and since 2020 that of Long Beach, finalist of the Bocuse d’Or Mauritius 2022 competition, Amalen Vyapooree is recognized for the excellence of her profession. He also has other strings to his bow, including that of a meticulous administrator, which earned him today to be promoted to the position of Executive Assistant Manager at the Long Beach hotel, the 5* star Sunlife group located on the east coast of the island.
Amalen Vyapooree, 40, has had a passion for cooking from an early age. He started his career at the Royal Palm in 2002. For eight and a half years, he worked alongside Chef Michel de Matteis, his spiritual father, who pushed him to have an experience abroad. The opportunity presents itself to him with an offer in Qatar to work with Gordon Ramsay holder of two restaurants, the Gordon Ramsay (gastronomic) and the Opal, in St Regis of Doha. His progress was dazzling and after two years, he became second in the kitchen.
In 2015, he won the title of best restaurant in the Middle East for Gordon Ramsay. Then he takes on a new challenge as a consultant for a Japanese group in Dubai. In parallel, he will also provide F&B operations consulting services for the Yu Lounge in Plaisance before settling in La Pirogue in 2017.
Since joining Sunlife, Amalen has continued to reinvent the dining experience in the hotels where he settled. In February 2023, he obtained an MBA in «Luxury Management & Marketing» from ESG Paris.
