« The Perfect Experience » : ouverture magique au Flowers of Paradise

. Le concept « The Perfect Experience » a été conçu par Oxenham avec la collaboration de plusieurs restaurants et hôtels du nord, afin d’associer et d’accorder des plats avec des vins et des spiritueux dans le but créer des émotions et de faire vivre une expérience culinaire sans précédent.

Il fallait une grande soirée pour lancer The Perfect Experience, une série de 10 accords mets et vins dans 10 restaurants situés dans le nord de l’île, organisée par E.C. Oxenham et nous n’avons pas été déçus. Tables sur la plage, animation magistrale du mentaliste et illusionniste William Watt, plats gourmands et accord parfait, le Flowers of Paradise a donné le ton parfait pour la première de cet événement destiné aux épicuriens le samedi 14 mai.

Aux fourneaux, il y a toujours le chef Rajen Lolith, qui occupe ce poste depuis dix ans maintenant. Lolith est l’exemple même de la persévérance et de l’assiduité. Débutant dans l’intendance, il va très vite suivre les pas de sa mère qui travaillait comme cuisinière dans un restaurant. Apprenant sur le tas, il cumule les postes dans différents établissements très connus du nord de l’île : le Canonnier, le Pescatore, les Cocotiers, le Meridien, l’Aventure du Sucre, la Langouste Grillée et finalement le Flowers of Paradise où il semble avoir déposé ses valises pour très longtemps.

La collaboration de Rajen avec Christophe, ce Lorrain de Metz dont le père était président de l’hôtellerie régionale et sommelier dans les belles maisons locales, débouche sur une cuisine raffinée à partir de beaux produits délicatement. Si pendant longtemps il a travaillé avec des produits venus de France, depuis quelques années, pandémie oblige, il propose beaucoup plus de produits du terroir. Le résultat est encore meilleur, diront les connaisseurs.

Ainsi pour cette soirée inaugurale, le menu faisait la part belle au camarons et au cerf. Le premier présenté en Cadaif avec des épices des îles et salade de papaye verte, palmiste braisé et saint jacques en carta fata était sobrement accompagné d’un AOP Pessac-Léognan, Les Demoiselles de Larrivet, Haut-Brion 2013. Excellenate mise en bouche pour le plat vedette, le Filet de cerf en croûte d’herbes, pommes de terre Anna et jus corsé. Rajen Lolith a démontré tout son savoir-faire dans la cuisson de ce gibier qui demande souvent des épices pour masquer le côté sauvage. Point de tout cela avec Rajen qui nous explique sa méthode.

« J’ai préparé ma croûte avec les herbes que l’on jetterait normalement en les laissant sécher naturellement. Je les écrase ensuite pour faire la croûte. Quant au filet et faux filet de cerf, je le saisis à feu vif d’abord puis je le badigeonne de moutarde avant de l’enrober de la croûte d’herbes. Je finis la cuisson pendant 3 minutes au four à 180 °C. Mais la réussite du plat reste dans la première étape et aussi dans la découpe de la viande ». Le résultat était en tout cas bluffant ! Une viande fondante, onctueuse et parfumée, se mariant à merveille avec l’AOP Saint-Estèphe, Château German Marbuzet, 2015, un mélange bien équilibré de cabernet sauvignon et de merlot avec un soupçon de cabernet Franc.

Pour terminer en beauté, il nous a proposé un dessert sentant bon les saveurs d’enfance avec une tarte citron caviar et rocher coco que le mixologue a sublimé avec un cocktail nuage de fumée préparé en direct sous les ébahis conquis de l’assistance. Que dire d’autre sur cette très belle soirée sinon qu’elle a été animée de main de maître par William Watt qu’on ne présente plus mais dont les tours n’en finissent pas de nous laisser pantois ! The Perfect Experience: magical opening at Flowers of Paradise

 

It had to be a big night to launch The Perfect Experience, a series of 10 food and wine pairings at 10 restaurants in the north of the island, organised by E.C. Oxenham and we were not disappointed. With tables on the beach, masterful entertainment from mentalist and illusionist William Watt, gourmet food and perfect pairings, Flowers of Paradise set the perfect tone for the premiere of this epicurean event on Saturday 14 May.

 

The reputation of the Flowers of Paradise is well established. Christophe Hitzgès and his team have always put a smile on the faces of all those who have sat down at his place in Pereybère, where he used to run a table d’hôtes and a few cosy rooms. Three years ago, faced with ever-increasing demand and the cramped conditions of the place, he moved to a small hotel off the beach in Mont Choisy. A move to the delight of its faithful guests. Nestled in a screen of greenery and facing the turquoise sea of the north of the island, the Flowers of Paradise offers a relaxing setting for holidaymakers and a tasty table for lovers of good food.

Chef Rajen Lolith is still at the helm and has been in the job for ten years now. Lolith is the epitome of perseverance and diligence. Starting as a steward, he soon followed in the footsteps of his mother who worked as a cook in a restaurant. Learning on the job, he accumulated positions in various well-known establishments in the north of the island: the Canonnier, the Pescatore, the Cocotiers, the Meridien, the Aventure du Sucre, the Langouste Grillée and finally the Flowers of Paradise, where he seems to have left his bags for a very long time.

Rajen’s collaboration with Christophe, a Lorrain from Metz whose father was president of the regional hotel industry and a sommelier in the fine local houses, leads to a refined cuisine using beautiful and delicate products. If for a long time he worked with products from France, for a few years now, due to the pandemic, he has been offering much more local products. The result is even better, say the connoisseurs.

Thus, for this inaugural evening, the menu featured “camarons” and venison. The former presented in Cadaif with island spices and green papaya salad, braised palm and scallops in carta fata was soberly accompanied by an AOP Pessac-Léognan, Les Demoiselles de Larrivet, Haut-Brion 2013. An excellent appetizer for the star dish, the Herb-crusted Venison Fillet with Anna potatoes and full-bodied jus. Rajen Lolith demonstrated his skill in cooking this game which often requires spices to mask the wildness. None of that with Rajen, who explains his method.

« I prepare my crust with the herbs that you would normally throw away and let them dry naturally. I then crush them to make the crust. As for the venison fillet and sirloin, I sear it over high heat first and then brush it with mustard before coating it with the herb crust. I finish cooking it for 3 minutes in the oven at 180°C. But the success of the dish lies in the first step and also in the cutting of the meat. In any case, the result was amazing! The meat was meltingly smooth and fragrant and went perfectly with the AOP Saint-Estèphe, Château German Marbuzet, 2015, a well-balanced blend of Cabernet Sauvignon and Merlot with a hint of Cabernet Franc.

To end on a high note, he offered us a dessert smelling of childhood flavours with a lemon caviar tart and “gato coco” (coconut scones) that the mixologist sublimated with a cloud of smoke cocktail prepared live under the amazed and conquered eyes of the audience. What else can be said about this beautiful evening except that it was masterfully hosted by William Watt, who needs no introduction but whose tricks never cease to amaze us!
