Frédéric Goisset apporte 30 ans d’expérience gastronomique au Sands

Cet amoureux de l’art culinaire est tombé dans la marmite très tôt. L’école n’étant pas son fort, il débute son apprentissage à 16 ans.

Depuis deux ans, c’est un chef formé auprès des grands chefs comme Alain Ducasse Jean-Andre Charial, Alain Burnel, Serge Chenet, Françis Chauveau, ou encore Franck Cerrutti qui préside aux cuisines du Sands Suites Resorts & Spa. Sa cuisine est très technique et axée sur le terroir avec une touche provençale. Forgé par de nombreuses années d’expérience professionnelle dans le monde de la gastronomie et de la bistronomie, cet aventurier du goût compte émoustiller vos papilles gustatives et vous faire vivre une expérience culinaire mémorable. Originaire du sud-est de la France, Frédéric Goisset qui s’est déjà fait un nom à Maurice au sein du groupe Constance et au LUX* Le Morne, a rejoint les cuisines du Sands Suites Resorts & Spa depuis novembre 2020 et depuis, il fait découvrir aux clients des saveurs provençales, espagnoles et multiculturelles . Riche de son expérience professionnelle acquise dans divers restaurants étoilés et grands établissements hôteliers, le nouveau Chef Exécutif a donné un second souffle au restaurant Pink Peppercorn en proposant principalement des poissons fraîchement pêchés cuits au gril ou à la plancha, diverses grillades et des salades fraicheurs. Le tout dans un cadre somptueux s’ouvrant sur la baie de Tamarin et offrant des couchers de soleil spectaculaires accompagnés de tapas.

« Je suis très heureux d’avoir rejoint la brigade du Sands Suites Resorts & Spa. C’est la plus petite structure à taille humaine que j’ai dirigée jusqu’à présent. Avec la pandémie, cela n’a certes pas été facile. À mon arrivée, avec l’équipe, nous avons dû revoir les menus et proposer de nouvelles formules afin de nous adapter à la clientèle locale. Nous avons mis en place une carte composée de trois entrées, plats principaux et desserts, que nous changeons régulièrement pour varier les saveurs », relate Frédéric Goisset avant de poursuivre « je reste confiant quant à l’avenir et j’espère apporter encore plus à l’hôtel de par mon expérience dans le milieu ».

Cette expérience débute, il y a plus de trente ans ! Cet amoureux de l’art culinaire est tombé dans la marmite très tôt. L’école n’étant pas son fort, il débute son apprentissage à 16 ans. « Je ne voulais pas continuer ma scolarité et j’ai voulu m’orienter assez rapidement dans le milieu professionnel. La cuisine n’était pas une vocation définie ou choisie. J’ai dû choisir un centre d’apprentissage rapidement et comme dans ma famille, ils sont un peu dans le milieu de la restauration, je me suis décidé à faire un CAP/BEP au lycée professionnel de Bonneveine à Marseille sur deux années et une fois les diplômes en poche, je suis rentré dans la vie active assez rapidement. Je n’avais que 18 ans à l’époque », raconte-t-il.

Après le lycée, le jeune aspirant eut la chance d’intégrer un très bel établissement à l’Oustau de Baumanière, restaurant 2 étoiles Michelin à l’époque, aux côtés du père fondateur, Raymond Thuilier. « Après avoir passé 5 belles années à l’Oustau de Baumanière, j’ai dû faire mon service militaire. Le propriétaire de l’établissement Monsieur Jean-André Charial m’a placé dans un ministère à Paris. J’ai travaillé pour deux ministres de la défense, Charles Million et François Léotard à l’hôtel de Brienne en 1995 ».

À la fin de son service militaire, il réintègre les cuisines de l’Oustau Baumanière en tant que chef de parti. « J’ai eu l’opportunité de travailler aux côtés d’un Meilleur Ouvrier de France, Serge Chenet pendant un an en tant que chef de parti au restaurant Le Prieuré à Villeneuve les Avignon dans le Vaucluse. Ensuite, je suis parti au Carlton à Cannes où j’ai passé 2 ans et demi au restaurant La Belle Otero. Après cette belle aventure dans ce restaurant 2 étoiles Michelin, j’ai rejoint la brigade de l’hôtel de Paris à Monte Carlo dirigé par le grand maestro Alain Ducasse comme commis de cuisine tournant ».

En 2000, il s’envolera pour le Qatar ou il officiera pendant un an comme sous-chef de cuisine française pour la famille royale Al Thani dans leur Palace Al Wajda. Après cette riche aventure orientale, il rejoindra sa mère en Guadeloupe où il travaillera pendant un an à Saint Barthelémy, à l’hôtel Carl Gustaf, sur le port de Gustavia.

Retour en France, à l’hôtel du Castellet avec le chef Hervé Sauton en tant que sous chef executif durant trois années. avant de mettre le cap sur l’île Maurice en 2006.

« J’ai fait un petit voyage à Maurice avec mes parents dans les années quatre-vingt-dix et je trouvais la destination tropicale et exotique. J’ai aimé l’hospitalité mauricienne et cette richesse culinaire. Puis un jour, j’ai eu une offre d’emploi et Maurice était sur la liste. J’ai sauté sur l’occasion. Il m’a fallu un temps d’adaptation pour connaître les produits et faire les mélanges entre techniques européennes et locales. Mais je m’y plais bien même si mes racines me manquent ». Et tant mieux pour les clients du Sands !

Originally from the south-east of France, Frédéric Goisset, who has already made a name for himself in Mauritius within the Constance group and at LUX* Le Morne, joined the kitchens of Sands Suites Resorts & Spa in November 2020 and since then, he has been introducing guests to Provençal, Spanish and multicultural flavours. With a wealth of professional experience gained in various Michelin-starred restaurants and large hotels, the new Executive Chef has given a new lease of life to the Pink Peppercorn restaurant by offering mainly freshly fishes cooked on the grill or a la plancha, various grills and fresh salads. All this in a sumptuous setting overlooking Tamarin Bay and offering spectacular sunsets accompanied with tapas.

« I am very happy to have joined the brigade at Sands Suites Resorts & Spa. It is the smallest, most human-sized facility I have managed to date. With the pandemic, it has certainly not been easy. When I arrived, the team had to review the menus and propose new formulas to adapt to the local clientele. We set up a menu consisting of three starters, main courses and desserts, which we change regularly to vary the flavours », says Frédéric Goisset before continuing « I remain confident about the future and I hope to bring even more to the hotel thanks to my experience in the field ».

This experience began over thirty years ago! This lover of the culinary arts fell into the pot very early. School was not his strong point and he started his apprenticeship at the age of 16. « I didn’t want to continue my schooling and I wanted to go into the professional world quite quickly. Cooking was not a definite or chosen vocation. I had to choose an apprenticeship centre quickly and as my family is somewhat involved in the restaurant business, I decided to do a CAP/BEP at the Lycée Professionnel de Bonneveine in Marseille over two years and, once I had my diplomas, I entered working life fairly quickly. I was only 18 at the time, » he says.

After high school, the young aspirant had the chance to join a very fine establishment at the Oustau de Baumanière, a 2-star Michelin restaurant at the time, alongside the founding father, Raymond Thuilier. « After spending five wonderful years at the Oustau de Baumanière, I had to do my military service. The owner of the establishment, Mr Jean André Charial, placed me in a ministry in Paris. I worked for two ministers of defence, Charles Million and François Léotard at the Hôtel de Brienne in 1995.

At the end of his military service, he returned to the kitchens of the Oustau Baumanière as a chef de partie. « I had the opportunity to work alongside a Meilleur Ouvrier de France, Serge Chenet, for a year as a chef de partie at the restaurant Le Prieuré in Villeneuve les Avignon in the Vaucluse. Then I went to the Carlton in Cannes where I spent two and a half years at the restaurant La Belle Otero. After this great adventure in this 2 Michelin star restaurant, I joined the brigade of the Hotel de Paris in Monte Carlo directed by the great maestro Alain Ducasse as a rotating commis de cuisine.

In 2000, he flew to Qatar where he worked for a year as a French sous chef for the Al Thani royal family in their Palace Al Wajda. After this rich oriental adventure, he joined his mother in Guadeloupe where he worked for a year in Saint Barthelemy, at the Carl Gustaf hotel, on the port of Gustavia.
Back to France, at the Hotel du Castellet with Chef Hervé Sauton as Sous Chef for three years before heading to Mauritius in 2006.

« I made a short trip to Mauritius with my parents in the nineties and I found the destination tropical and exotic. I loved the Mauritian hospitality and the richness of the cuisine. Then one day I got a job offer and Mauritius was on the list. I jumped at the chance. It took me a while to get used to the products and to mix European and local techniques. But I like it here even if I miss my roots. And so much the better for the Sands’ customers!
